How to Make Macaroni-Shaped Zucchini Noodles

Okay, so they’re not identical to macaroni. BUT, they are c-shaped, like macaroni noodles are.

While you can’t truly replace macaroni and cheese, macaroni-shaped noodles are ideal for making pasta salads!

These c-shaped noodles are easier to manage (they’re shorter) and they’re a nice change in shape, if you’re in a spaghetti rut.

Spiralized pasta salads are perfect for back-to-school lunches and end-of-summer picnics – they pack well.

My all-time favorite zucchini pasta salad is my Italian Zucchini Pasta Salad, but here are some others that use the macaroni-shaped zucchini noodle:

These c-shaped noodles aren’t just for pasta salads, they’re great in soups, too! Here are some examples:

Since I love making macaroni-shaped zucchini noodles SO much, I made you a video to show you just how I do it – plus, I’m sharing my favorite Italian dried herb vinaigrette that I use in salads and spiralized pasta salads.

The trick to this dressing? The longer it sits on the zucchini noodles, the better – it helps marinate the veggie and soften it.

  • I have been using my 'real' Greek pasta salad recipe, but subbing your zucchini macaroni (and yellow squash) all summer. It is even better than with pasta, and it only needs half the dressing because the vegetables give off some liquid. So good!

  • I love the Italian Zucchini Pasta Salad...I recently took it on a camping trip (so it was exposed to a number of temperatures) and it just kept getting better and better. I was worried the zucchini would get weird, but we were still eating it after 3 days. And it's remarkably close to feeling like real pasta! I can't wait to try these in soup.

  • Took this inspiration and made the EASIEST and most crowd-pleasing lunch salad!! Simply combined 2 large zuchinni (macaroni of course), a tub of store-bought refrigerated pesto, a block of part-skim mozzarella cheese, and 6 plum tomatoes diced and seeded. Combined it right before serving and it was SUCH a hit. The ladies loved the nice crunch of the zucchini! I want to heathen it up a bit and make it with your walnut pesto! YUM! Thank you!
