Paleo Cauliflower Alfredo with Gluten-Free Chicken Meatballs and Sweet Potato Noodles

I’m really excited about today, not only because this recipe is hands-down my favorite meatball recipe to date, but because our Brand & Community Manager, Meaghan, goes from part-time to full-time, officially today!

I’ve been waiting for this moment for so long and I’m probably doing a happy dance somewhere in my apartment right now, as this posts. Or, sipping coffee, trying to wake up. Either or….

Vegetables and Fruits You Must Spiralize This Fall

What To Spiralize In The Fall

Happy first official day of Autumn!

To celebrate, let’s talk fall produce: what is in season that can be spiralized. Move over zucchini, the sweet potato is in town!

Pfft, like we’d ever give up zucchini noodles ;-)

Raw Beet Noodle and Rainbow Chard Salad with Avocado-Ranch Dressing

Raw Beet Noodle and Rainbow Chard Salad with Avocado-Ranch Dressing

I’ll be the first to admit: sometimes, it’s tough to be healthy.

Sometimes, you just “can’t find the time” to put together a healthy meal or snack.

Sometimes, reaching for a block of cheese and crackers is easier than laboring over a salad.

I’ve been there, often. However, I have a little trick that I’m sharing with you today that involves Nourish Snacks.

Creamy Okinawa Sweet Potato Pasta with Leeks and Pancetta

Creamy Okinawa Sweet Potato Pasta with Leeks and Pancetta

How about those Grammy’s, eh?

Truth be told, after a very filling seafood feast at one of our favorite restaurants here in Florida, I passed out on the couch right at the beginning of the show.

We also tried to watch The Walking Dead, but, again, I slept as the zombies attacked Rick Grimes.

Vegan Buffalo Cauliflower with Sweet Potato Noodles

Vegan Buffalo Cauliflower with Sweet Potato Noodles

Last Sunday, while I was grocery shopping for the week, I had written down on my notepad: “something for the playoffs.”

If you don’t watch sports or care, then I’ll tell you: we’re in the midst of the NFL playoffs. Actually, none of my teams are in the playoffs this year, and I’ve grown generally apathetic towards football.

However, my fiance loves sports (as most of ’em do) and I wanted to get something playoffs-themed for a Sunday night dinner.

My weight loss story: How I used the spiralizer to get healthy and lose 25 pounds

The Inspiralized Weight Loss Journey How I used the spiralizer to take control of my health, lose 25 pounds and get totally fit!

You might want to bookmark this post, print it out, or save it for a weekend morning when you have time to waste. Or, grab a bowl of popcorn, lean back and get to scrollin’.

Why?

I’ve never been a short-winded person. I’m terrible at keeping this “short and sweet.” I love to talk, write and explain. And today, of all days, I’m especially verbose, because I’m pouring my heart out about my personal weight loss journey.

Carrot Noodles with Mushrooms and Sausage in a Cashew Cream Sauce

Carrot Noodles with Mushrooms and Sausage in a Cashew Cream Sauce

Yesterday, I went to the grocery store downstairs to grab some spinach for my morning smoothie. Near the spinach, there is a basket full of carrots.

Sometimes, these carrots are your average skinny carrots. Yesterday, however, it was as if a farmer had said “let’s make a carrot perfect for spiralizing.”

I bought the two carrots, of course, even though I was not sure what I would make.

Cajun Broccoli Potato Noodle Pizza: Two Ways

Inspiralized Pizza Skillet

I know, I know – it’s Sunday and we’re trying to plan for a healthy week ahead and I’m presenting you with a pizza. But you know what? This pizza is made with just 5 ingredients plus 3 seasonings. It’s a “whole foods” kind of pizza.

Plus, this pizza is gluten-free. By using potato noodles as a crust, we’re avoiding the processing that goes into making most pizza doughs. Also, using potato noodles provides more nutrients and creates a fluffy, interesting crust.

Herbed Ricotta Butternut Squash Noodles with Walnuts, Chickpeas and Cumin-Roasted Carrots and Cauliflower

Herbed Ricotta Chickpea Butternut Squash Noodles with Cumin-Roasted Carrots and Cauliflower

Butternut squash noodles, meet my blog. Blog, meet butternut squash noodles. While I’m not saying this is an abbreviation that needs to stick, but for the sake of my tired fingers and time, let’s refer to them as butternut sqoodles. I know, not that catchy. Trust me, I spent a solid 4-7 minutes on this.

Other contenders included:

– Buttsqoodles (sounds like a type of fart)
– Buttnut sqoodles (sounds perverted)
– Buttersqoodles (too heavy)
– Buttah’ sqoodles (a bit slangy)
– Sqoodles (not exact enough)
-Buash noodles (confusing)

So you see… butternut sqoodles are our best bet. Now that we’ve set the standards, let’s talk spiralizing our favorite fall and winter veggie: butternut squash

Gluten-Free Turkey Meatloaf with Zucchini Noodles

Gluten-Free Turkey Meatloaf with Zucchini Noodles

I was never a fan of meatloaf. The thought of a brick of ground meat didn’t appeal to me.

Then, I realized, if I stuffed it with as many veggies as possible, it would kind of be like a favorite pasta sauce of mine, turkey bolognese.

Alas, here we are, with an easy turkey meatloaf, chock full of veggies – even zucchini noodles!
