I just saw a GIF on Facebook from the movie ‘Hocus Pocus‘ that was of the 3 main witches (Bette Midler, Sarah Jessica Parker, and Kathy Najimy) with their faces looking absolutely shocked. The text on the GIF said, “When someone tells me they’re not excited for fall.”

My face would be the same as those three witches – I LOVE fall. I am so excited to be giving birth at the end of September, because October is my all-time favorite month, and I can’t wait to take stroller walks with the baby and smell the fall foliage and feel that cool, crisp breeze.

The summer I became vegan (back in 2008, before my senior year in college), I had no idea what to make at first. I wasn’t cooking at that point, so everything was new for me. I started with almond butter and banana sandwiches, then switched to tofu teriyaki stir fries, and ate a lot of fruit for breakfast.

That winter, when I was home for winter break, I decided to experiment with vegan foods and realized very quickly that eating vegan opens up your mind to different types of foods, very quickly.

By being “restricted” to certain foods, you’re forced to think outside of the box and discover other types of eating.

Back in the winter, I went to a conference about pulses. Pulses, in case you don’t know already, are legume crops that are harvested just for their seeds (think: dried beans, lentils and peas.)

At this conference, we attended some cooking demos at the incredible Culinary Institute of America, where they made some amazing dishes using pulses.
