To be honest, Juli’s amazing Paleo-centered blog was my first real exposure to the Paleo blogosphere. She let me share my Inspiralized bun as a guest post back what seems like ages ago (you can find that recipe here) and ever since, I’ve been following her funny, upbeat, genuine point of view on keeping healthy and fit.
She kinda makes me want to try Crossfit. Kinda. Maybe. I’m scared.
This apple noodle and prosciutto salad recipe can be found on her blog (the nutritional information, though, is at the bottom of this post.)
As you’ll read, this salad is meant to be a way to utilize leftover prosciutto from the holiday meat and cheese platter and slowly work normal portions back into your life. Making salads is kind of my jam.
If you’ve never crisped prosciutto, you’ve never lived. It’s so easy – it’s just baked in an oven, but the saltiness in the meat is released and the combination of that savoriness with the toasted hazelnuts and sweet apples is unparalleled.
