Easy Apple Noodle & Rhubarb Crisps

After seeing an uncanny amount of rhubarb recipes, I decided to order and try some rhubarb. Yes, up until a few days ago, I had never tried rhubarb.

What’s rhubarb like? It’s tart and savory. Paired with a sweet apple, you’d never imagine something so simple looking (a stalk) could taste so good.

Easy Apple Noodle & Rhubarb Crisps

Aside from incorporating one of springtime’s most popular ingredients, I’ve made an apple crisp that’s so ridiculously easy to make, you’ll be making it for dessert on a whim for the rest of spring.

Apples are probably tied with zucchini for “easiest vegetable to spiralize.” You literally just load them on the spiralizer – no prep required. Have you seen this video?

Just remember to take off the sticker (if you’re buying a grocery store that labels their produce) – I made that mistake and was really confused when I was chewing on adhesive.

I love these crisps because they apple and rhubarb do all of the work. As they roast slowly, they soften and their juices release and sweeten the crisp.

There are so many yummy and healthy granolas out there, so pick your favorite and sprinkle it on top of the apples and rhubarb at the end, roast for another 5 minutes and voila – a gourmet crisp, using only four ingredients (granola, apples, rhubarb and honey)!

I chose  Udi’s Gluten Free Vanilla Granola, which I had never tried before and it worked so well – vanilla with the apple and rhubarb is the perfect amount of sweet.

The granola heats up in those five minutes and completes the crisp. Instead of mixing flour with sugar and oats, choose a healthy granola (with recognizable ingredients!) and use that instead.

These crisps are perfect for a spring picnic or just a night in to treat yourself. And who doesn’t love a treat?

Inspiralized

Easy Apple Noodle & Rhubarb Crisps

Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes
Servings 4

Ingredients

  • 3 rhubarb stalks
  • 3 apples I used gala and honey crisp, Blade C
  • honey to drizzle
  • 1/2 cup granola of choice I used Udi's Gluten Free - vanilla granola

Instructions

  • Preheat the oven to 350 degrees.
  • Take your rhubarb and slice lengthwise down the stalk. Then, cube. In a bowl, toss the rhubarb with the apple noodles.
  • Take out four ramekins. In each ramekin, pack in the apple-rhubarb mixture three-quarters of the way full (leave room at the top for the granola).
  • Lightly drizzle the tops of each ramekin with honey and then bake for 30 minutes. After 30 minutes, remove the ramekins, place 2 tbsp of granola on top per ramekin and bake for 5 more minutes.
  • Once done, serve.

  • This looks awesome! I love rhubarb with strawberries, but I never thought to pair it with apples. And I bet maple syrup would be a good complement for those of us who favor that over honey. Thanks for the delicious idea!

  • Not the world's biggest fan of rhubarb but I LOVE your spiralized apples! I don't actually own a spiralizer (I make courgette/zuccinni noodles with a cheese grater XD) wonder if it would work on apples. Can't hurt to try. Does the noodle serve any particular function, here, do you reckon, or is it more just a fun texture alternative to cubes?:)

  • is there a step missing about the ramekins? starts with step three of "take out the ramekins" - take em out of my cupboard?! and are they supposed to be greased at all?
  • I have made this several times. We love it. Wonder how it will be with strawberries when we can't get fresh rhubarb? We like this with toasted coconut Greek yogurt.
  • The rest of you must have jumbo size ramekins. I could not begin to fit the fruit into four ramekins, let alone leave room for the topping.
  • Made this as a treat dessert tonight and loved it! who would have thought an apple crumble could be so easy and healthy! I added ginger, cinnamon and a dollop of natural yoghurt to serve and it was perfect :) Next time might even do with half pear noodles too!
  • do you need to core the apple before you spiralize? won't you get seeds and tough chunks in there?
    • You do not need to core! The seeds don't make it through the Inspiralizer, so they get jammed in the blades so when you're done, you just brush them out!
  • Fall is a great time to make this crisp, too, I still have rhubarb in my garden. Try a real maple syrup drizzle instead of the honey. Add a little cinnamon and a tad of syrup to your plain yogurt topping - delicious!! Thanks for this EASY, tasty recipe!
