Israeli Cucumber Noodle Salad with Tuna

I’ve been referencing this salad for a while now, and I’m happy to finally share it with you, because it’s such an easy recipe, but has so much flavor and texture.

Everyone has been asking for more quick lunch recipes and I’m delivering!

Israeli Cucumber Noodle Salad with Tuna

A few weeks back, I was working in Williamsburg, Brooklyn with KIND on an exciting upcoming project. I can’t wait to share what I’ve been working on with you all, so stay tuned.

Around lunchtime, I walked over to Wythe Avenue and had lunch at 12 Chairs Cafe. I ordered their Israeli Salad and a side of pita and hummus. Oh, and a mint iced tea.

The warm pita and the homemade hummus was amazing, but what really impressed me was the Israeli Salad (chopped tomatoes, onions and cucumbers.) Chop, chop, chop.

As I was eating it, it seemed to have a slight hint of cumin and a saltiness that could have only come from lemon juice. I made a mental note and decided to #makeitinspiralized and replace the chopped cucumbers with spiralized ones.

What a difference it made! I love that spiralizing can take an original dish and truly transform it into something much different – and usually, more satisfying. Call me crazy, but I rather have noodles than chopped veggies.

The saltiness in the tuna complements the lemon juice and flavors in the cumin.

This dish saves well in the refrigerator, too. I suggest adding in the tuna on the day you eat it, for optimal freshness. Seafood can be a little funky that way.

  • This sounds great. I love tuna. Making this as soon as I find a seedless cucumber!
    • hi Annie - I used a zucchini this morning instead of the cuke and it worked out just fine! Those 'English' cucumbers are seedless - they're generally longer than a regular cuke. But like I said, the zucchini worked out fine (of course, I've never tasted it made with cucumber so I can't really compare the two...). In the instructions Ali mentioned 'parsley', which wasn't in the list of ingredients. Since I had some fresh parsley on hand I threw in a handful (kind of time consuming, getting all the stems off) and it really added a nice freshness to the salad! ~ ruth
      • I didn't see any reference to parsley ..where was that mentioned..?
      • Anonymous - 'parsley' was mentioned in the instructions, but it wasn't in the list of ingred's. Guess it got edited out sometime between yesterday and this morning. Last month Ali had a similar dish but it used zucchini instead of cuke and it was warm. Also delicious - parsley was definitely in that one! https://inspiralized.com/2015/09/14/zucchini-spaghetti-with-parsley-tuna-and-lemon/ ~ ruth
  • YES!!! Thank You for more easy, quick meals. And the discount :)
  • My spirsluzervonly has 3 blades.... No D... Any suggestions?
    • use the one that makes the finest noodles.
  • Just wondering if it is really "1.25 cup" diced onion? Looks delish!
    • Kathie, I was wondering the same thing. That sounds like a lot of onion. Looks like a typo. Maybe .25 cups (1/4 cup)?
  • Made this for dinner last night...so excellent! My measurements are never exact but just what looks right. Used an English cuke, a little less cumin & didn't have any parsley. But my Inspiralizer does a great job on the red onion! Now I have some extra for another dish. This same recipe would also be great substituting diced chicken or a little salami for the tuna.
  • I made this for dinner tonight. My husband and I loved it. Love using lemon juice in the dressing. I also used lemon zest. I had an avocado that needed to be use. So, that went into the salad. Thank you for a wonderful light dinner.
  • Found your recipe via Yummly and it was delicious! Thanks for sharing! I used more cucumber and less of everything else than suggest..but, it was still AMAZING! It is a great use of my garden surplus! Will definitely be making this again and again! Thanks again!!!!
    • This is excellent to hear, Ruth! We're so glad you found the recipe!
