I’ve been referencing this salad for a while now, and I’m happy to finally share it with you, because it’s such an easy recipe, but has so much flavor and texture.
Everyone has been asking for more quick lunch recipes and I’m delivering!
A few weeks back, I was working in Williamsburg, Brooklyn with KIND on an exciting upcoming project. I can’t wait to share what I’ve been working on with you all, so stay tuned.
Around lunchtime, I walked over to Wythe Avenue and had lunch at 12 Chairs Cafe. I ordered their Israeli Salad and a side of pita and hummus. Oh, and a mint iced tea.
The warm pita and the homemade hummus was amazing, but what really impressed me was the Israeli Salad (chopped tomatoes, onions and cucumbers.) Chop, chop, chop.
As I was eating it, it seemed to have a slight hint of cumin and a saltiness that could have only come from lemon juice. I made a mental note and decided to #makeitinspiralized and replace the chopped cucumbers with spiralized ones.
What a difference it made! I love that spiralizing can take an original dish and truly transform it into something much different – and usually, more satisfying. Call me crazy, but I rather have noodles than chopped veggies.
The saltiness in the tuna complements the lemon juice and flavors in the cumin.
This dish saves well in the refrigerator, too. I suggest adding in the tuna on the day you eat it, for optimal freshness. Seafood can be a little funky that way.
