Originally, I intended for this post to be about adult popsicles, which have become all the rage. There’s actually this hotel called The Conrad in lower Manhattan and at their rooftop bar (cutely called Loopy Doopy), they serve prosecco and ice pops.
I mean, how cool is New York?
Despite my intentions, I ended up with a cool, refreshing way to spruce up your hydration: spiralized water pops!
I’m always asking for limes with my water at restaurants and a day rarely passes when I don’t make myself a hot water with lemon. Whenever I see a water cooler at a spa or gym that’s filled with fruit or veggie infused water, I do a little dance and help myself to some.
Why drink regular ice water when you can have it infused with detoxifying fruits and veggies that taste tangy and even more fresh?
Drinking loads of water is one of my top health tips, for those of you on a fit journey. I just posted up a picture of my weight loss Instagram account (@GetInspiralized), showing that I’ve officially lost 20 pounds – all from exercising and eating Inspiralized (I wanted to practice what I was preaching!)
Honestly, I couldn’t have done it without water. Most of the time when you feel hungry, you’re really thirsty and dehydrated. Keeping yourself hydrated keeps everything metabolizing properly and helps flush out those toxins that are bogging you down. Best part? It clears your skin up!
For many people, drinking plain old water doesn’t come as easily. That’s where these ice pops come in! By adding cucumber noodles, mint and lime to your water, you’re hydrating yourself while packing in some nutrients (hello Vitamin C!)
These pops are the perfect summertime treat for your kids – the lime juice is tangy and almost sweet and the cucumber noodles harden when frozen and can be bitten right into.
Lu tried one and thought it was dessert! It’s a great after-dinner treat to suck on instead of reaching for those cookies. Although, these funfetti biscotti are calling my name – once I finish the photography for my cookbook (I want to look my best!), I’m going to treat myself with those.
Honestly, don’t even think about it and prepare these, pop them in the fridge and all week you’ll have a hydrating, refreshing and tasty treat to quench those snack urges at night!

Nutritional Information & Recipe
Lime, Mint and Cucumber Noodle Ice Popsicles
Ingredients
- 3/4 cup freshly squeeze lime juice
- 4 tablespoons chopped mint
- 6 oz cucumber noodles
- water
Instructions
- In each pop mold, place in 2 teaspoons of the mint and 2 tablespoons of the lime juice into the ice pop mold. Then, add in 1 oz of the cucumber noodles. Fill to the top of the mold with water and place the bottom on to secure.
- Freeze for 4-6 hours, preferably overnight. To enjoy, run the pop mold under warm water first.
