I texted my mother and said, “Mom, what’s a low carb meal look like?” She responded, “Under 15 carbs.”
She’s diabetic and has lived the past 30+ years of her life counting carbs, so I figured she was a good gauge.
I never have been concerned with carbs, since I’ve always looked at them as a healthy source of energy. Good carbs are all that you’ll ever see on this blog – beans, nuts, seeds, peas, whole grains, potatoes, corn, and things of that nature. Real carbs that fuel you, not carbs that come in a plastic bag.
