I’m back with another recipe that I made for the Peloton Cycle blog.

After so many people asked me for simple weeknight meals, I shared one of my personal go-tos after a weekend at the farmer’s market: Pesto Zucchini Pasta with Chicken and Green Beans.

Pesto Zucchini Noodles with Chicken and Green Beans

Whenever I go to the farmer’s market, there are a few things I always get: basil, zucchini, and green beans. I roast, grill, and steam green beans all throughout the week – they’re great in pastas (like today’s recipe), tossed into salads, and served alongside your favorite protein.

Basil’s either used as a garnish, in a sauce, or of course, in my weekly pesto, because I’m addicted. In the summertime, I eat pesto zucchini noodles at least twice a week.

Whether you’re grilling the chicken and green beans or cooking it in a skillet like in this recipe, you’re going to love how simple this meal is, but how flavorful.

  • All the recipes sound great and im keen to try them, but I'm having to copy and paste and then edit them into a word doc so that i can print them out in a simple format. Its a bit of hard work
  • Could you please just have a PRINT icon in plain view at the beginning of the recipe?? I love to print each and every one of the recipes, but have to "go around Robin's barn "to find the printed recipe.

  • Just made this for my 19 year old meat lover. I gave it a taste -YUM! If he doesn't walk in and eat it soon it's going down my hatch! And my husband's salivating at the look of it! Thanks for an EASY, DELISH summer dinner! I love the mix of cold noodles and heated chicken and beans! Oh - he just walked in, sat down -YAY! He's eating it!
