My favorite childhood memories are mostly around Halloween. I’ve always loved Halloween.

I think one of the reasons I never fully committed to moving outside of the Northeast, is because I love the crisp fall days leading up to Halloween.

When I lived in Hoboken, I used to love walking around my neighborhood and looking at all the extravagant Halloween decor. Gorgeous pumpkins, spiderwebs and of course, an electronic mummy sticking out of the ground, trying to grasp at my ankles.

Honestly, if someone would bottle the smell of Halloween, I’d buy it.

I mean, what’s better than snuggling up with your friends and watching Hocus Pocus? Not much!

Actually, my entire life, I wanted to get married in October for this very reason – I just love it! I love the way the air smells, I love the fall foliage, I love how excited the little kids get on the street, all dressed up.

I obviously didn’t get married during October, because I got married in June. Why not? Well, we got engaged in July and honestly, I just couldn’t wait to marry my best friend!

But back to Halloween. I love the festivities that take place – the pumpkin decorating, the spooky cocktails, the scary movies and most importantly, the themed food.

I wish so much that I had a dining table in my apartment so I could throw a Halloween themed dinner party, but alas, I don’t. I hope that next year we’re living in a bigger apartment and can have one.

And if I do have one, you bet your bottom dollar that I’ll be making these roasted carrot mummies!

I love adult parties that allow us to be kids for another day and these do the trick! They’re cute enough for a kids party and chic enough for an adult party. You can serve them with a dip or dijon mustard or drizzle them with something like an avocado crema!

The measurements in this are a bit tricky, because carrots can vary so much in length. Basically, find the largest carrot you can find and buy a few red potatoes and try this out!

And dare I say you have a spiralized carrot mummifying party? That’s totally a thing.

Roasted Carrot Mummies

Prep Time 15 minutes
Cook Time 40 minutes
Total Time 55 minutes
Servings 3

Ingredients

  • 3 large carrots
  • 2 large red potatoes
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 2 small black olives
  • 1 teaspoon goat cheese about

Instructions

  • Preheat the oven to 450 degrees. Line a baking tray with parchment paper.
  • Bake the carrot on the parchment paper for 10 minutes. Then, remove the carrot from the oven and let cool until you can touch it.
  • Wrap your carrot with the potato noodles, leaving a bit of room at the top for the eyeballs to peek out. Brush over with olive oil. Season with salt, pepper and garlic powder. Repeat until all the carrots are “mummified” and place them all on the parchment paper.
  • Bake for 30 minutes. While carrots bake, prepare the mummy eyes: cut the olives into thin slices. Set aside.
  • Once carrots have baked, remove from the oven and add on the eyes in the space left when wrapping them: place two dabs of goat cheese and top with two olive slices. Enjoy!
