Sesame Chicken Zucchini Noodles

There hasn’t ever been a celebrity cookbook that I was this excited about. Today’s dish is an #inspiralized version of one of the recipes from Chrissy Teigen’s recently published, NY-times best-selling cookbook, Cravings.

While I’ve always dug Chrissy Teigen’s no-BS attitude, I never knew she had such skills in the kitchen!

The cookbook itself is gorgeous – the layout, the food photography, and of course, the shots of Chrissy and her husband, John Legend. I mean… Lu and I could never pull this off:

Since the book is titled “cravings” and Chrissy’s always posting gluttonous food porn on her Instagram, I was worried there would be nothing in this book for me – but quite the contrary! Most of the recipes can either be modified to fit certain dietary preferences or are mostly wholesome, like with today’s recipe for Sesame Chicken Noodles (that’s the original title.)

Sesame Chicken Zucchini Noodles

The recipes are easy to follow, and like the title suggests, full of recipes that you’ll actually want to make. There are great entertaining recipes, but then there are easy salads and pastas, like with the one I’m sharing today.

I love the cute glimpses into her fabulous life with John and her cute anecdotes in the headnotes for the recipes. Chrissy’s sarcastic, hilarious voice comes through even in the recipe verbiage itself. So, it’s a fun book to read at the very least!

Anyway, enough about my girl crush on Chrissy- let’s get to the recipe! Seriously, I was so impressed with a) how easy this recipe was to make and b) how outstanding the Asian tahini-sesame sauce was! It was the perfect thickness to coat the zucchini noodles and was packed with Asian salty, savory flavor. I was so impressed! I’ll definitely be making this recipe for guests, it’s a crowd pleaser.

If you’d like to grab Chrissy’s new book (it came out February 23rd this year), you can grab it here.

And Chrissy… if you’re listening, I can come over and whip you and John up something spiralized anytime you’d like 🙂 Just sayin’.

Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes
Servings 4

Ingredients

  • kosher salt
  • 1 8- ounce boneless skinless chicken breast
  • 4 medium zucchinis Blade C, noodles trimmed
  • 1 teaspoon sesame oil
  • 1/4 cup peanut oil
  • 1/4 cup tahini
  • 3 tablespoons soy sauce
  • 2 tablespoons red wine vinegar
  • 2 teaspoons chili oil
  • 1 teaspoon honey
  • 1/2 teaspoon cayenne pepper
  • 1 garlic clove minced
  • 2 scallions thinly sliced

Instructions

  • Fill a large saucepan two-thirds full of water and bring to a boil over high heat. Salt it so that it tastes good, add the chicken breast, and remove the pot from the heat. Cover and let the chicken sit until cooked but very tender, about 15 minutes. Remove the chicken from the water and cut into it to check its doneness; if it's still a little pink, return it to the water for another minute or two. Remove the chicken to a plate and let it rest.
  • Place a large skillet over medium-high heat and once the pan is heated, add in the zucchini noodles and cook for 5 minutes or until al dente.
  • Meanwhile, in a medium bowl, whisk together the sesame oil, peanut oil, tahini, soy sauce, vinegar, chili oil, honey, cayenne, and garlic until smooth.
  • Shred the chicken with your hands or chop it into bite-size pieces and add it ot the noodles. Add the dressing and toss to coat. Garnish with the scallions.

  • This looks delicious! I definitely want to try. I do have a quick question though...my son has a peanut allergy so I wouldn't want to use the peanut oil. I was wondering if you might have any suggestions on a good substitute? If not and you think the peanut oil is critical to the recipe, no worries! I'll make it anyway - more for the rest of us! ;) Thanks!
    • You can substitute in avocado oil or even olive oil!
    • Just because I did not have peanut oil, I used a little more sesame oil and coconut oil, and it was fabulous!
  • Is it really just one chicken breast for four people/servings?
    • That's what her recipe calls for! You only use a few chicken pieces in the dish! But, if you'd like to use more, go ahead!
  • This sounds so yummy and better yet...easy! Luckily I have all the ingredients here but going to substitute shrimp I didn't use yesterday for the chicken. Looking forward to making this for dinner today!
    • Let us know how it is with shrimp. I am thinking about making it with shrimp tomorrow!

  • Definitely will try this recipe. I don't know how anyone else feels but as much as I love these simple, delicious & healthy recipes, I'm becoming overwhelmed by the social media level. Who honestly has the time to continually sign in and read/comment on 6 different social media sites and it seems more are being added daily. Does no one have a job, a home to care for, other real, live humans in their lives or other obligations? As much as I love spirilizing, I live in a real world where I can't walk with an iPad or phone in my face 24 hours a day writing and checking all the sites here. I'd rather cook and spend time enjoying the recipes. This is too social media, event pushed heavy now and I'm enjoying it less and less. I know it's a good marketing/advertising tool but wow .. it's really too much. I'm off to cook & stop chasing advertisements and events. That's the whole point of why I signed up.

  • I am so excited to make this later this week!! I saw you make this on your snap chat and was so pumped! It looks so delicious and is making my stomach growl! I have one question tho, where in a grocery store is chili oil usually located? I've never seen it, but also never looked for it, so I have no idea where to even start! Thanks for making this recipe, Ali!!
    • You can find it in the international grocery aisle, near any Asian condiments. Otherwise, you can find it on Amazon! If you want to do without it, you can use red pepper flakes instead (about 1/4 teaspoon)!
  • What could I replace the peanut oil and chili oil with to make it Whole 30 compliant?
    • Chili oil can be replaced with some red pepper flakes (about 1/4 teaspoon) and you can use any other oil, it won't change the flavor profile too much (try olive or avocado.)
  • Is there no need for any oil when sautéing the zucchini noodles?
    • I'm curious about this question too - do you need to put oil in for the zucchini noodles while sauteing?
      • Nope! As long as you use a nonstick skillet, you don't have to use oil!
  • Hi there, would you recommend mixing right before you eat if you plan to have leftovers? With pasta I'd just make a big batch, but not sure how well the zoodles will hold up in the sauce overnight. Thanks!!
  • I didn't know what I was making for dinner tonight until I saw this recipe and knew it was exactly what I wanted! It is a keeper!! I'm not a big tahini fan so I substituted reduced fat creamy peanut butter and it was delightful. Also did 2 chicken breasts which stretched the recipe a bit for leftovers. Thanks for sharing this winner!
  • Hi Ali, This looks delicious, and I'm definitely going to try it! Would it be possible for you to send me the nutrition information? I love that you include that on most of your recipes because I am diabetic and need to know how much insulin to take based on the number of carbs in each serving. Thanks!
  • Chrissy Teigen is such a stunning woman and I see her cookbook pretty much everywhere! It must be such a favorite! This take on sesame chicken noodles looks so good--zucchini noodles are absolutely perfect for this dish because they're tasty, high in vitamins and minerals, so satisfying and so versatile for anything!
  • Is the nutritional information available for this recipe?
  • Looking forward to trying another 'winning' recipe. Also, for the person who asked about nutritioinal info, I would like to share that I run recipes through a neat little calculator that I found on http://www.myfitnesspal.com/recipe/calculator not only will you be able to get nutritional info on any recipe, you can see how much any changes you choose to make will affect the nutrition.
  • What is Tahini and where I can find it? Also, wondering where to find chili oil? Thanks!
  • This looks divine! Do you know the nutritional info by any chance? Love your recipes!
  • Calories please?
  • has 11 Smart Points as written. (need to cut down on some of the oils)
    • Thank you! Was trying to find the information :)
  • This recipe is so delish! I've made it numerous times and don't know why I didn't post about it before! I used zoodles and swoodles (sweet potato noodles) and didn't have chili oil so i used some chili flakes + chili sauce. Makes for amazing leftovers too! Thank you!
    • Hi Warner! Love this! This recipe is definitely a favorite!
  • I made this for my family tonight with Asian noodles for them and capitalized zucchini for me. I used chicken thighs, so I kept in the boiled water another 5 minutes. I have our Yorkie some boiled chicken and mixed the test with that amazing sauce. Everybody loved it!!
