All vegans quickly learn that a plant-based diet requires serious creativity in the kitchen. It’s really easy to get caught in a pasta-every-night rut. I can’t tell you how many nights in a row that I made the exact same dinner: tofu and vegetable teriyaki stir fry over brown rice. Every night, people. For months! Just ask any of my college roommates.

Luckily, spiralized cooking offers vegans (and everyone else in the world, for that matter) a rut-free way to eat vegetables. You can only dice veggies so many times before you lose your mind, ya know? For all vegans to see, one of my recipes was featured on One Green Planet yesterday.   • I have just recently discovered how much I love zucchini pasta, and now I am sad that the end of the season is here. What am I going to do all winter??? haha
    • Even though zucchinis won't be "in season" they are still available at grocery stores! Plus, this gives us time to discover other veggies that are fun to spiralize like carrots, sweet potatoes, and winter squashes, like butternut. Stay tuned! Thanks for the comment :)
