Tomato Sweet Potato Noodles with Chicken & Artichokes

After posting up that Bacon Shrimp Scampi recipe and polling my readers, it’s evident now that y’all prefer simpler recipes. That’s great, because with the spiralizer, even the simplest of recipes have such great flavor.

Today’s recipe calls for sweet potato noodles simmered in a tomato sauce. And wow, simmering sweet potato noodles (as opposed to pan-frying or boiling) in a savory sauce is my new jam.

Today, I’m participating in a Blueberry Contest! You can check out all of the details on the Blueberry Council’s website. Basically, we’re directed to use blueberries somehow in a recipe and pair it with balsamic, rosemary, coconut or banana. I chose coconut, because I don’t cook with that ingredient enough!

I love blogging contests, because it encourages me to be creative with selective ingredients. Walking through a farmer’s market or grocery store, I’m inspired by all of the fresh produce and always bring a notepad so that I can jot down ideas. For example, I once saw persimmons next to the cheese aisle one morning and scribbled down the beginnings of this Persimmon Cucumber Salad.

Coconut and blueberries, here I come.

It’s quickly changing into the winter season, at least here in the NYC area. Goodbye 65 degree lazy Sundays and hello morning flurries! On that same note, adios rooftop tacos and margs and hola tortilla soup! Alas, not even a blistering cold winter day can discourage me from eating some sort of Mexican food. 

However, soups and I have a rocky relationship. I can’t ever decide if soups are enough to satiate me. It’s hard for me to conceptualizedrinking” my meals. As you can probably guess, I’ve never done a juice cleanse. BUT, add in some lean proteins, hearty veggies and zucchini noodles and we’ve got ourselves a Mexican feast… in a soup! I can dig that.

I’d like to say that Inspiralized classifies as a healthy food blog. While I’m not preaching every day, I think it’s obvious that I live by some main healthy principles, such as “eat as clean as possible,” “use healthy fats in moderation,” “if it’s going to be a processed carb, have it be whole grain,” and “consume as many vegetables as possible.” 

In fact, I don’t cook with dairy milks or creams, white flour or breads, or anything terribly processed. However, I do use cheese in my recipes. Oh, the cheese.

Sounds oxymoronic, right? No, let me explain.

Hoboken Mommies & Chicken (Zucchini) Noodle Soup

Guess what? I was featured on Hoboken Mommies, a social networking website for moms in Hoboken, NJ. I wrote an article on making healthy meals for your kids. I know what you’re thinking “But you’re not a mother?” That’s alright – I have a mother, I have friends and family who are mothers, and most importantly, I know healthy eating. Plus, I’m a woman and therefore have a maternal instinct, doesn’t that count for something? You don’t have to be a parent to understand that it’s crucial that our children grow up eating a balanced diet, including plenty of heart-healthy veggies.
