One of the best parts of food blogging is discovering and trying ingredients that you would have never used before. That ingredient today is… coconut aminos! Well, I tried it for the first time when creating this Beef Noodle Soup. Originally, when writing the recipe, I used soy sauce. However, this recipe was designed for a Paleo audience, so I did my research, discovered liquid aminos and then coconut aminos and redid the ingredient list.

Coconut aminos tastes very similarly to soy sauce. It has a slight after taste, but aside from that, you can barely tell the difference. Today, I marinaded salmon in the coconut aminos for a colorful and flavorful bowl of spiralized veggies.

I’ve got to say, the Paleo community is very friendly, inviting and collaborative. When I reached out to Juli from PaleOMG, she responded right away and was enthusiastic about me contributing a recipe for her blog, featuring my sweet potato noodle bun. She even introduced me to one of her other Paleo-bloggin’ friends… very cool.

Now, viewer discretion is advised, because this sandwich is MASSIVE. I purposefully made it larger-than-life for dramatics, but if you were making it yourself, it would of course be normally proportioned. The salmon, bacon, avocado and sweetness of the bun make for a melting pot of flavor and a home-run in the Paleo sandwich department, I think.

Creamy Tomato Zucchini Pasta with Salmon and Asparagus

I don’t know about you all, but I definitely took advantage of the July 4th holiday and perhaps had a bit too much to eat and drink and not enough treadmill time. No worries – Skinny Sunday is here!

Tonight’s recipe contains chunks of yummy salmon. Salmon is infamous for its richness in omega-3 fatty acids which are vital to the health of our entire bodies. These fatty acids help lower cholesterol and support brain functions such as memory. I could go on about the powers of salmon as a heart-healthy fish, but instead – let’s get to the recipe!
