I’ve been secretly (and by secretly, I mean, I just haven’t been sharing my trials on social media) trying to make the perfect zucchini noodle thai salad.

I wanted a creamy almond sauce that wasn’t too sweet or too tangy. I wanted a good balance of crunch and of course, a lot of fluffy texture. I wanted something filling, that wouldn’t leave me feeling hungry 25 minutes later. I wanted a colorful bowl of noodles, packed with vegan protein.

You’re going to freak – this salad is ideal for your work week lunch: it saves well, it’s flavorful, it’s filling and it’s absolutely delicious.

Thai Quinoa and Zucchini Noodle Salad

Prep Time 30 minutes
Servings 4

Ingredients

  • For the salad:
  • 2 medium zucchinis peeled, Blade C, noodles trimmed
  • 1 large carrot peeled, Blade C, noodles trimmed (or julienned)
  • 1 large bell pepper sliced thinly
  • 1/2 cup diced green onions
  • 1 cup cooked quinoa I used red
  • 2 tablespoons slivered raw almonds
  • ¼ packed cup fresh cilantro
  • For the dressing:
  • 1/4 cup almond butter
  • 1.5 tablespoons lime juice
  • 1 tablespoons rice wine vinegar
  • 1 tablespoons soy sauce or tamari, if gluten-free
  • 1/2 tablespoon sesame oil
  • 1/2 tablespoons honey
  • 1 teaspoons grated fresh ginger
  • 1/2 tablespoon sriracha or other Asian hot sauce
  • 2 tablespoons of water to thin (or more as needed)

Instructions

  • Place all of the ingredients for the dressing into a food processor and pulse until creamy – or simply whisk together thoroughly. Taste and adjust, if necessary. Set aside.
  • Place the zucchini noodles in a large mixing bowl along with the carrot, bell pepper, green onions, quinoa, almonds and cilantro. Pour the dressing over the salad and toss together thoroughly.
  • Transfer the salad to a serving bowl and enjoy.

    • It is creamy enough that it will stay, but the noodles will definitely release moisture, so make sure to toss before you eat. To be safe, it's always best to prepare the dressing separately!

  • This is the 1st time I've heard of this company. I guess in lil' ole' west virginia we are a bit behind the times when it comes to other larger cities where newer products and trends are introduced first. But that is ok with me because by the time i hear about them they have been out long enough to be tried and tested through and true therefore, i have all the reviews necessary to make a conscious decision on whether to try something out. It sounds to me that some of these products are spot on and worth every bit the effort. I think i would try the marinara or thai pasta bowl first and definitely some juices. (I am saying all this under the assumption they are a company that delivers all over not a restaurant style store that only delivers locally. If i am wrong then 'wo is me'). Anyway, i agree w/Ali that i would add a few healthy "extras" in with the pasta bowls. (Of course if they dont deliver my way, i've always got Ali's kicka$$ recipe from today i can make. Amongst many more awesome recipes to choose from. Woo-Hoo!)

  • I live overseas and just ordered and received my first Paderno spiralizer. Getting used to the machine, which I find a bit flimsy and oddly structured. Wondering if there is a sturdier and more user-friendly spiralizer out there, although I understand this is the one which is recommended. However, I have managed to already make two recipes - the chicken pho soup and the Thai quinoa and zucchini noodle salad. Both were an amazing success with great flavor and satisfying crunch. I enhanced the pho with some lemon grass and Kaffir lime leaves which gave it more complexity and depth. I am very much looking forward to receiving Ali's new Inspiralized cookbook which I have ordered through Amazon. Keep the unusual, spicy and creative recipes coming!

  • Your instructions say to use Blade C. My spiralizer machine has 7 different blades with names of the types of shapes. What type of shape does a Blade C create? Thank you.
    • Blade C makes linguine noodles! We recommend doing your best to match the noodle shape up with the noodles made by your machine. In most cases, the noodle shape is just personal preference!
