Tomato Sweet Potato Noodles with Chicken & Artichokes

After posting up that Bacon Shrimp Scampi recipe and polling my readers, it’s evident now that y’all prefer simpler recipes. That’s great, because with the spiralizer, even the simplest of recipes have such great flavor.

Today’s recipe calls for sweet potato noodles simmered in a tomato sauce. And wow, simmering sweet potato noodles (as opposed to pan-frying or boiling) in a savory sauce is my new jam.

As for this recipe, it’s simple – sweet potatoes, chicken, and artichokes. Who doesn’t love those three fresh ingredients? Plus, in true Inspiralized fashion, we’re enjoying the sweet potatoes in an inventive way – as noodles, of course.

Tomato Sweet Potato Noodles with Chicken & Artichokes

The sweet potatoes simmer in the tomato sauce and soften just perfectly, absorbing the slight sweetness of the tomatoes. The chicken and roasted artichokes add the perfect balance of veggies and protein to make a complete meal that’s filling, seasonal and most importantly: easy on the hips!

Tomato Sweet Potato Noodles with Chicken & Artichokes

If you haven’t tried sweet potato noodles yet, I encourage you to start now. You can saute them in a little olive oil, boil them, bake them or, in this case, simmer them in a sauce. Molto bene, trust me!

  • Just received my Spiralizer and sweet potatoes were the first thing I spiralized, I love them but my husband has been avoiding them for years. First dish was Sweet Potato with grilled chicken, mushrooms and roasted tomatoes. He loved it, last night he asked me if I could try to make the zucchini noodles for him with some shrimp. So glad to have found your blog and your recipes are really great, I enjoy the simple ones too but will try some of the more complicated ones on the weekend. Next try, sweet potato noodles in the waffle maker for the grandson who only eats white food!

  • I made this tonight and it is SO good! My hubby also agreed! He already told me I could make it again anytime!! :) I was a little nervous that the sweet potatoes were going to be a little too sweet, but after you cook them down, they blend so nicely with all the spices!
