It’s been since the summer since I shared a What I Ate Today video, and a few of you have been requesting these videos, so I filmed one yesterday.

On top of that, I’m sharing a sneak peek into my living room and featuring my newly styled console table!

In this new What I Ate Today video, you’ll see me eat the following:

Breakfast: Eggs with zucchini noodles and avocado
Lunch: Veggie sandwich on Ezekiel bread
Snack #1: Gingerberry flavored kombucha
Snack #2: Apple
Dinner: Vegetarian Meatballs with Spiralized Celeriac Spaghetti
Dessert (not shown): 1 banana with almond butter

Our Console Table

After moving Inspiralized out of our living room and into my own office space, our apartment started to look lonely. After all the clutter from my office (camera gear, office supplies, printer, my books, my Inspiralizers, etc), the hallways were finally clear and the walls were bare.

I used to really hate looking at the side of our living room that was my work space, but now, after having the chance to decorate and style my living room the way I’ve always wanted to, I love it! Our living room is now a place where I’m inspired, I feel organized and fresh (not frazzled and crowded), and it’s a space now that’s much better for entertaining.

Styled Console Table

Most recently, I purchased this console table from West Elm during one of their amazing flash sales. It’s actually on sale now! After purchasing it, I had to go about styling it. While I’ll change it up depending on the time of year, it’s styled for right now – with a holiday pop!

The focal point is this white-framed geometric print from Minted, which I love – it’s the perfect ambiguous pop of color for this part of our apartment and it complements the gold of the console very well. Since many of you asked about it on Snapchat, I figured I’d share more about it in a blog post (hence, today!)

  • I saw the veggie sandwich a while back and ate it for several days then forgot about it. Thanks for reminding me about it! It's a great sandwich! Easy to put together and it has everything I love on it. Never tried it with mustard (which I love also). What kind do you use? Only negative is that I put so much yummy stuff on it that it can be hard to eat! But I just get a fork! Thanks for posting the What I Ate Video, I love them!

I'm sure you wrote a post about this in the past, but I wanted to ask you here just in case you hadn't. Did you find that when it came to losing weight and keeping it off, it was more diet based vs exercised based? I know the importance of the combo (I work out at least 4 days a week and eat super healthy as well!), but I'm looking for some changes, and I wonder what ended up being the main part of what has brought you to feeling (and looking) as incredible as you do!
