What do you think about roasting a variety of root veggies (i'm thinking parsnips, carrots, celery root) with either Mediterranean or curry spices? Would that combination work? Do you have a recipe along those lines? Other suggestions?

Thanks - Love your recipes!

Ali, I've been meaning to write to ask what you do with the hollow ends of your butternut squashes. While I'd still appreciate ideas, it seems to me that, with a little extra work, that part of the squash could substitute for the pumpkin in your recipe for butternut squash with pumpkin sage sauce (remove seeds, peel, cut, cook, puree; it sounds like something to do a day ahead). Thoughts?
