I only work with brands that I love myself. These are brands that make my life easier, happier, or healthier. You’ll never see me promoting something I don’t believe in or use regularly.

On Friday, I was going to make a buffalo chicken wrap with spiralized carrots and I couldn’t find any large enough carrots to spiralize. I was bummed, because I was excited for this easy and healthy recipe.

Meatless Monday, I got ya.

I’ve tried so many ways to make a crispy, breaded cauliflower steak and I’ve always failed – it’s clumpy, soggy, and not crispy at all.

I’ve finally perfected it and I’m turning this breaded cauliflower into a cauliflower parmesan (a la chicken or eggplant parm) and serving it up with some zucchini noodles.

As a first time mama, I have never had more appreciation for mothers than I do now (now that I’ve been “in the trenches.”) All mamas should be appreciated year-round, but it’s nice to have this one day to truly celebrate!

All of a sudden, we turned the corner and it’s consistently in the 70s! I’m LOVING this weather, and all I want is easy dishes to make this summer.

My favorite way to spiralize in the summertime is make a pesto noodle dish – just toss zucchini noodles with pesto and add whatever else you want into the bowl!
