Avocado-Tuna Salad with Beet Noodles

When I started Inspiralized in June 2013, if I asked someone if they knew what spiralizing was, they looked at me like I had four heads. Or, if I asked if they knew what veggie noodles were, they’d say, “Oh, I LOVE spaghetti squash!”

Needless to say, spiralized veggies weren’t on the map.

Now, fast forward less than five years later and here I am, happy to share that one of the most well known frozen and canned veggie brands, Green Giant, has launched a line of frozen spiralized vegetables called Veggie Spirals!

I have already been using Green Giant’s Riced Veggies product – they make a variety of riced veggies, such as Cauliflower (aka “cauliflower rice”). And who has the time to rice cauliflower? It’s such a mess!

Now, you may be asking, “Why would she promote a pre-spiralized product when she sells a spiralizer?

Well, I am especially excited to share about Green Giant’s new Veggie Spirals, because when I started Inspiralized, my “dream” was for spiralized vegetables to be part of everyone’s cooking regimen. I wanted people to be as excited about spiralizing vegetables as I was – and most importantly, I wanted everyone to cook with spiralized vegetables, so they could see how delicious healthy can taste.

And I’m realistic. More than ever, people are busy. I can attest, now as a mother, that time is precious. If you can save even 3 minutes out of your day, it’s a win! Those 3 minutes can be spent with your boyfriend, girlfriend, husband, wife, kid(s) or just on yourself.

At the end of the day, if more people are cooking with spiralized vegetables, I’m happy! I want spiralizing to be accessible to everyone – and if that means they’re pre-spiralized and frozen, so be it. Now that we’ve got that out of the way, let’s get to today’s recipe, using Green Giant’s Beet Spirals! The Veggie Spirals come in four different flavors – Butternut Squash, Carrot, Zucchini, and of course, Beet. You can see me debut the products here, on Facebook!

GreenGiant Veggie Spirals

I chose to use Beet Spirals, because, personally, I dislike spiralizing beets. They’re SO messy and you really have to make sure you clean your spiralizer afterwards, so it won’t stain.

I love beet noodles best in salads, so I served the Beet Spirals with greens tossed in an easy dressing and topped it with my life-changing Avocado-Tuna salad. Seriously, if you’re someone who loves tuna, chicken, or egg salad – you’re in for a healthy treat. I swapped the mayo for mashed avocado and the consistency is just the same, the flavor’s even better, and you’re sneaking in a healthy fat into your meal!

For those Beet Spirals, I simply steamed them and let them chill in the refrigerator to enjoy them chilled in this salad. All of the Veggie Spirals taste like freshly spiralized veggies and they’re thick enough to cook easily!

Avocado-Tuna Salad with Beet Noodles

Prep Time 15 minutes
Total Time 15 minutes

Ingredients

  • For the salad:
  • 1 package GreenGiant Beet Spirals
  • 1.5 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • freshly ground salt
  • freshly cracked pepper
  • 3 packed cups spring mix or other greens
  • For the tuna salad:
  • 1 medium ripe avocado peeled, pitted, and lightly mashed
  • 1 5 oz can chunk lite tuna in water
  • 1.5 teaspoons Dijon mustard
  • 1 celery stalk diced
  • 1/4 cup diced red onion
  • salt and pepper

Instructions

  • Fill a medium pot with hot water and a pinch of salt and bring to a boil over high heat. Once boiling, open the package of Beet Spirals and add to the boiling water. Cook until no longer frozen, about 3 minutes. Drain the noodles into a colander and pat dry. Set in the refrigerator to chill, about 2 hours.
  • In a small bowl, whisk together the olive oil and vinegar. Season with salt and pepper. Set aside.
  • Combine all of the ingredients for the tuna salad in a medium bowl, season with salt and pepper, and mix well. Set aside.
  • Divide the Beet Spirals and spring mix onto two bowls. Drizzle with dressing. Top with the avocado-tuna salad mixture. Garnish with fresh cracked pepper. Serve.

  • I've tried spiralizing beets and that was a first and a last! At least I'll be using those GG ones!

  • Thank you Ali. I eat tuna on a regular basis and lots of tuna salad. Great idea to add the avaca and the beets. By the way the brand called Safe Catch has the lowest mercury of any brand of tuna on the market. I would hope it is on the east coast too.
  • As much as I love picking out fresh veggies at the store and spiralizing them myself, I'll probably pick up Giant's carrot and butternut squash spirals if they make their way in to my grocery store. I can't consistently find large enough carrots to get a great noodle, and I hate how much omphf is required to spiralize a butternut squash (plus I then have the bulb leftover that I have to figure out what to do with). While I will still spiralize most things myself (plus I assume it's cheaper), some veggies just aren't worth the hassle and it's nice to have a convenient option!
    • Trader Joe’s makes a fantastic pre-spiralized carrot noodle!
  • So, I don’t love Dijon. Thoughts on traditional mayo instead?
  • I have 2 beets in the fridge and plan to spiralize but haven't yet chosen a recipe, so now I can make this one. Question - if using fresh beets, do you still need to cook them briefly and then chill before using, or can you simply spiralize and add to the salad?
  • For the recipes in which you use purchased spiralized veggie noodles, it would be helpful if you would give an equivalent amount/weight if one is using fresh veggies spiralized by us. I happened to look at your pictures of the GG veggies and noticed that they were 12 ounce pkgs, so if you could also mention that in the body of the recipe, that would be most helpful. Thank you for your consideration of this idea.
  • Personally the one I don't like speaking is carrots. You lose half of it and most of the "noodles" are maybe an inch long because they are so skinny. I haven't had a problem with beets staining my spiralizer as long as I rinse it when I'm done and run the dishwater into the sink as I do the rest of the cooking. Plus I like using both the greens and the leftover tops in smoothies for breakfast. How would on package compare to the number of cups spiralized?
