This fall, I’m all about sweet potatoes. They’re such a healthy starch, they fill you up thanks to their dietary fiber, and they taste like you’ve just hugged a pumpkin.
Since sweet potato noodles are so hearty, they pair well with a thick sauce, like a ragu. Today, I’ve made one of my favorite spiralized sweet potato recipes (Brussels Sprouts and Lentil Ragu with Sweet Potato Noodles) in a video!
This whole dish is especially amazing, because it saves well in the refrigerator as leftovers. Think: healthy work lunches.
