My blades aren’t labeled A,B and C so I tried all 3. They are wide noodle, thin noodle and something else (or something similar – I don’t have the Sprializer in front of me)

What blade were you using? The first time I tried to spiralize a pepper, I used Blade C! I thought, “I’ve been spiralizing for 2 years now, I don’t need to watch her video on how to spiralize a pepper.” Blade C will give you pepper confetti! So then I watched the video, tried it again, and I’ve had no problem spiralizing peppers since.
