Made this for the first time yesterday and this might be one of my favorite dishes of all time! I’ve never had chimichurri before and now this will be a regular dish in rotation. The chicken and sauce pair so well together and the potatoes are a great side dish.

I could probably eat chimichurri on everything, but especially crispy chicken. I’ve never had spiralized potatoes, but I’m intrigued!

I’ve been looking forward to this recipe! Funny, seeing peaks of it in your stories recently, I was inspired and made chimichurri for some roasted chicken thighs this past weekend; I didn’t really like the chimichurri recipe I found – it’s was from Epicurious and little too heavy-handed on the red wine vinegar and no onion – so I’m really excited to give THIS recipe a whirl. 😀
