Chive Dijon Potato Noodles Recipe

I’m experimenting with a “5 ingredients or less” series. I want to put together a full week of recipes using, well, five ingredients or less!

As I was writing these recipes, I got a little confused as to what qualifies as an ingredient. Does olive oil count? Salt? Pepper?

Well, if you don’t count those pantry essentials, then, yes, this recipe is only five ingredients: garlic powder, red potatoes, mustard, chives and apple cider vinegar.

I’m thinking that in November, I’ll do a week full of recipes that are five-ingredient meals. This recipe isn’t a meal, it’s a side dish!

I used to always be stumped when making dinner and serving potatoes on the side. I’d always default to cubing them and roasting them. Pretty predictable, pretty uneventful.

Now, with the Inspiralizer, it’s never the same! I love spiralizing potatoes and turning them into something more exciting. I think we should come up with a hashtag for this like #ditchthedice – no more diced veggies!

Chive Dijon Potato Noodles Recipe

This simple dijon-chive dressing gives these potato noodles a nice bite, perfect for pairing with a steak or say, a pork chop. The dijon mustard is key and complements heavy proteins.

Otherwise, these potato noodles would work well mixed together with some kale and topped with a simple roasted salmon.

I didn’t want to make any of these recipes, because I wanted you to focus on the possibilities with this simple potato salad!

Call me crazy, but I like cold potatoes. So, if you’d like to chill these, the more power to you! You can add them to salad or toss them with chilled quinoa!

Dijon-Chive Spiralized Potatoes

Cook Time 10 minutes
Total Time 30 minutes

Ingredients

  • For the potatoes:
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1 pound red potatoes Blade D, noodles trimmed
  • salt and pepper to taste
  • For the dressing:
  • 1/2 tablespoon country dijon mustard
  • 2 tablespoons olive oil
  • 2 tablespoons chopped chives
  • 1 teaspoon apple cider vinegar
  • salt and pepper to taste

Instructions

  • Place the olive oil into a large skillet and once heated, add in the potato noodles and season with garlic powder, salt and pepper. Cook for 10 minutes, tossing frequently, or until potato noodles cook through.
  • Meanwhile, whisk together the ingredients for the dressing into a small bowl. Set aside.
  • When potatoes are done, place into a large mixing bowl and pour over the dressing and toss thoroughly to combine. Serve immediately or refrigerate to chill.

  • Love the 5 ingredient meals idea. So...how do you keep the potatoes from browning if you aren't immediately dropping them in the pan??
    • There's very little prep here, so the potatoes aren't exposed for that long, so they don't brown. If you are planning ahead, submerge the noodles in cold water and place in the refrigerator until ready to use.
  • Love the idea of 5 ingredient meals. And just my two cents, I don't think pantry essentials count. :)
  • Looks delish! Question; How many red potatoes, size (S/M/L), skin on or off?
    • It's one pound of potatoes, so that's about 2 medium potatoes. If the recipe doesn't indicate peeling, then they aren't peeled, but feel free to peel them if that's your preference !

    • LOVE the Whole30 comment! I'm doing that and so many of my meals are from Inspiralized recipes, or my own creations...once you're hooked on spiralizing, the sky's the limit! In fact, I've thought they should 'partner up' because the recipes are easy (and easy to make W30 if they aren't already!), fun and delish! People on W30 that aren't aware of spiralizing are missing out! I've been spirailzing for almost 2 years and a huge fan! I use mine 1-2 times a day!

  • What is W30? I just recently bought a spiralizer. I am going to visit my sister this week and I'm taking my new toy with me so I can introduce her to it. My favorite recipe is the Shrimp with the Lime Basil Avocado sauce. We had it twice within the same week. Thanks for your recipes, I'm going to try many of them.
    • W30 -- or Whole30 -- is a clean way of eating. It is a variation on Paleo, but more than that. It is a 30 day diet reset, for a lack of a better term. For 30 days you eliminate grains, beans, dairy, soy and all sugars (no artificial sweeteners either) and focus on whole foods, healthy fats, protein, veggies and fruit. I have been following W30 for the most part with a few planned off roading for 3 years now. I eat more veggies than I ever did before and adding in spiralizing has just opened up a whole new way of eating -- hubby is so happy we can have pasta and while he loathes zucchini, he happily slurps it up in pasta sauce and as cold Asian inspired salads! Anyway -- after 30 days or longer if you wish, you add back in the foods that you eliminated and pay attention to how you feel eating those foods. It helps you eliminate any foods you are having issues with, and if you want to have those foods in your diet again and if so, when and how often.
  • I'd say for 5 ingredients ..if i don't have to measure it or prep it then it's a freebie..ie seasonings to taste. It's measuring everything out I hate..a tsp of this, 1/3 c of that. I can handle adding s&p, or eyeballing enough olive oil to saute something. Recipe looks delish.
  • I made a version of these, this morning, with a poached egg on top, instead of frozen, processed hash browns. Delicious!
