I can always find larger than normal carrots at my local asian grocery store, sometimes they are giant! I often go there just to get carrots to spiralize.

Ali – I have found a vegetable broth that is surprisingly good AND low sodium (140 mg/8 oz)
I grab it at whole foods. It is Imagine brand organic low sodium vegetable broth. It is fat free with no MSG as well. I particularly like it over others because the veggies used offer a “clean” taste — no peppers or veggies that can give an “off taste.” Homemade veggie stock is pretty easy to make and a great way to frugally use cuttings and clean out the veggie bin, but often, time demands a quicker solution!

There is nothing I would love more than finding a carrot large enough for my spiralizer. I have had no luck so far! I got little skinny noodles once, but after seeing your beautiful image (and snap), large carrots are my new mission! Thanks for sharing this recipe. In reply to Stephie G.. If you're in the Chicagoland area the Japanese market, Mitsuwa, in Arlington Heights had BEAUTIFUL carrots for spiralizing. I used them for the masala lamb, carrots and herbs from my garden this summer. They also have beautiful daikon that spiralizes perfectly for Ahi Tuna accompaniment.

Yes, but it won’t be “clear” soup – and vegetable broths tend to be high in sodium, so I really suggest you do it with water!

It’s wonderful to have access to those giant carrots but in actuality they are most likely genetically modified, best to select the normal sized carrots and use an old fashioned grater. Love your recipes, thanks for sharing and the inspiration.

This was my plight yesterday – all I wanted to do was make cold sesame carrot noodles, but alas, none of the carrots I could find were right for the job. Just used boring old zucchini instead. This is now my mission – will scope out our two farmers markets this weekend! This recipe looks delicious! 🙂

In reply to Stephie G.. @Stephie I was going to suggest the same thing! I LOVE my spiralizer, but when the veggies just don't fit I use the julienne blade on my mandolin and get a similar result.

This doesn’t help with the spiralizing, but if you really wanted the carrot essence without having the ability to spiralize, you could potentially julienne the carrot. Not as cool as noodles, but it’s a last resort.
