#EverydayInspiralized: Open Faced Summer Omelette with Spiralized Zucchini

After a one-week hiatus, we’re back with a new episode of #EverydayInspiralized, my video cooking series on my YouTube channel.

And this time, we’re making an easy breakfast for one: a summer omelette that you can make with ingredients from the farmer’s market!

The best way to sneak in extra veggies first thing every day is by having them at breakfast. However, spinach in your smoothies can get pretty boring after while and eating veggies plain isn’t exactly exciting, SO I’ve come up with an easy way: add spiralized veggies to your eggs!

You’re going to love how easy this recipe is – and the original recipe was here, but in this version, I’ve added goat cheese for some extra protein, sweetness, and creaminess!

  • This looks amazing. I've been making frittattas with mostly the same ingredients for years, but this looks better and takes 1/2 the time!. My frittatas will morph into Open Faced Summer Omelettes with Spiralized Zucchini (and roasted red peppers or sweet potatoes and feta, or whatever! I think I see one of these with Chorizo coming up on the horizon! Thanks for the idea. C.
  • Watching this reminded me of one of my favorite meals in college- ramen omelettes. I haven't had one of those in a while! I might try to make one with a healthy spin, sprinkling some nutritional yeast in with the spiralized zucchini and doing some different veggies on top (maybe some fresh peas and corn to "replicate" the freeze dried "vegetables" in those plastic packages). :D Thanks for being part of the changes I've made in what I eat over the past couple of years Ali! You make it easy to get healthy, affordable meals on the table. You're impacting my kids' eating habits too, so bravo!
