Today we have another episode of my #EverydayInspiralized cooking series and while I’m really excited for this episode because this soup is easy and crazy delicious, I LOVE the dress I’m wearing.
Seriously, this dress is so comfy (you feel like you’re wearing denim pajamas), but I think it’s pretty trendy and flattering! PLUS, it’s on sale right now if you want to snag it!
Outfit aside, this recipe is a one pan wonder. You just keep adding ingredients until it’s perfectly simmered and then sprinkle it with some shredded parmesan cheese for that savory, saltiness.
If you’re really feeling fancy, serve it with some warmed crusty whole grain bread (I like to pop some slices of bread on a sheet pan and set the oven to broil, letting the bread “toast” for 3-5 minutes.)
Of course, if you can’t find carrots large enough, you can also use zucchini noodles as a summer substitute! And to make it even more summery, ditch the kale and stir in a summer green like chard or spinach instead.
