Hi Ali, I absolutely love raw zucchini noodles, you got me in to them and I eat them every day for lunch! Congratulations on your little bean, it’s an exciting time. My daughter is 4 mos old and with spiralizing big raw zucchini salads for lunch I’ae lost 16kg (35lbs) since (she’s kiddo #4 too, it can be done). Raw zucchini noodles are much faster and easier than cooking them – awesomeness. I’m trying to eat a little more fish and this is just the perfect recipe for it, thanks, going to prepare it this weekend. Hey, this bowl reminds me of a Korean favorite: bibimbap. Mmm!

When I first read Fish Taco Zucchini Noodle Bowl I thought it sounded well, kind of yucky. Then I saw that beautiful, colorful picture of the finished product. WOW!!! I can’t wait to make this. Thank you for another beautiful , nutritious, delicious new dish to make. You’re the best.
