That is so funny. I also craved BBQ while I was pregnant. Ate BBQ chips every day. I hate chips and BBQ. No BBQ anything for me. This meatloaf looks fantastic. I will try it this week. Thank you.

Soooo goooood!!!!!!!

Made double and used baking dish. Will freeze remainder for later.

I still do not own a Spiralizer. Hmmm.... Hesitant since many kitchen aides end up in the forgotten cupboard space.

We can't do eggs so I ususally just leave them out of simple meatloaf that I microwave (gasp). Do you think this would bind without the egg maybe and extra tsp of almond flour and wringing out some of the zucchini?

In the instructions, it says to form it into a 9x5" loaf shape, but the pictures show it in a loaf pan. Should this meatloaf be baked in a loaf pan?
Thanks!

I've been making something like this with ground beef and spiralized zucchinii and sweet potatoes. I've been trying to think how to do it with turkey. This sounds perfect. As a suggestion (or two actually), I use 2 tablespoons of either flax meal or chia seeds per pound of meat instead of the almond flour, and it comes out perfect. Also, if you're going to chop those onions and carrots, spiralize them first, and it's a lot quicker and easier.
Thanks for this recipe. I needed it.
