Simply combined 2 large zuchinni (macaroni of course), a tub of store-bought refrigerated pesto, a block of part-skim mozzarella cheese, and 6 plum tomatoes diced and seeded. Combined it right before serving and it was SUCH a hit. The ladies loved the nice crunch of the zucchini! I want to heathen it up a bit and make it with your walnut pesto! YUM! Thank you!

The Italian Zucchini Pasta Salad is the best. It’s my new potluck dish. I have lots of vegetarian friends so I just leave out the salami. Thanks for the wonderful cookbook. Enjoying lots of the recipes!

I was worried the zucchini would get weird, but we were still eating it after 3 days. And it’s remarkably close to feeling like real pasta! I can’t wait to try these in soup.

It is even better than with pasta, and it only needs half the dressing because the vegetables give off some liquid. So good!
