A few weeks back, I made a butternut squash noodle pasta with kohlrabi greens. The green tips of the vegetable had a wonderful earthy and refreshing taste. Today, I’m taking the actual vegetable and spiralizing it. After I spiralized the kohlrabi (so easy!) and tasted a noodle, I knew it would be perfect in a crunchy and light salad with a sweet dressing.

There’s another reason why I’m eating healthy today. Last night, Lu and I hosted a birthday bash for his 35th. Thirty-five. 35. That’s 5 years away from the big 4-0. I’m 26, so I’m still in that “birthday parties are the best!” stage of life and had a blast entertaining our friends. The evening was full of laughs and celebratory clinking of glasses… and of course, lots of cheese, drinks, and desserts. As a result, I needed something low-carb and gluten-free today (on Halloween.) By the way, Happy Halloween!

Instead of noshing on leftover Milk Bar birthday cake truffles and brie, I made this noodle salad with fresh arugula. Kohlrabi has a delightful taste that’s similar to jicama. I spiralized a green apple to throw in the mix, which camouflages any bitterness from the kohlrabi noodles. The honey-dijon dressing ties it all together. I always choose country dijon in my dijon vinaigrettes – it creates a grainy texture that adds a kick to your meal. The dressing works fabulously with the walnuts and goat cheese and gives this salad a heartiness.

A couple pointers before we get to the spiralizing tutorial:

1. Make sure that both ends of the kohlrabi are sliced off flatly and evenly as possible.

2. Secure the kohlrabi firmly into the spiralizer.

3. Use some strength! When spiralizing harder veggies, it’s important to place pressure on the handle and push towards the blade.

Step 1: Chop off both ends of the kohlrabi so that they are flat.

Step 2: Peel the kohlrabi completely, making sure that there is no purple skin left.

Step 3: Place the kohlrabi into the spiralizer, firmly securing the vegetable into the spiralizer.

Step 4: Crank the handle with the teeth, while using the bottom handle for leverage. Don’t be afraid to add some pressure – firmer vegetables take extra pressure.

How to Spiralize a Kohlrabi: Kohlrabi & Green Apple Noodle Arugula Salad with Goat Cheese, Dried Cranberries & Walnuts with a Honey-Dijon Dressing

Ingredients

  • 1 kohlrabi peeled, Blade C
  • 1 green apple Blade C
  • 1/4 cup crumbled goat cheese
  • 2 tbsp chopped walnuts
  • 1 tbsp dried cranberries
  • 1 handful baby arugula
  • For the dressing:
  • 2 tbsp honey
  • 1 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 tbsp country dijon mustard
  • salt and pepper to taste

Instructions

  • Place all of the ingredients for the dressing in a bowl and whisk together. Taste and adjust to your preference.
  • Place the arugula and kohlrabi and green apple noodles in a bowl and pour over desired amount of dressing.
  • Top noodles with goat cheese, dried cranberries and walnuts. Enjoy!

  • My in-laws came over for lunch today, and I made this salad. It was fantastic! I will definitely be making it again. :)
  • I tried this a few weeks ago - it was so awesome that I invited friends over and made the same dish for them tonight. Everyone loved it and it was as awsome as the first time. I made a few substitutions the first time ...lettuce for arugula and regular apples instead of green. Either type of apple works just fine. Can use regular apple or green apple.
  • I used an online recipe importer to calculate the calories in this salad. I was a little taken aback when I saw that this salad has a whopping 800 and something calories ...for one serving?? The salad does look great but I would split this with four other people based on the calories alone!
    • That's definitely not the accurate count! What site are you using? It should come in around 425!
      • I am using the myfitnesspal recipe importer: Calorie Counter here is what it shows for 1 serving 1 cup(s) Kohlrabi - Raw Calories 36 1 apple (9oz/255g) Green Apple, Large Calories 95 57 g(s) Cheese - Goat, soft type Calories 152 2 tbsp chopped walnuts Calories 96 1 tbsp dried cranberries Calories 23 1 handful baby arugula 0.5 cup Arugula - Raw Calories 3 2 tbsp honey Calories 129 1 tbsp red wine vinegar Calories 0 3.0 tbsp(s) Oil - Olive Calories 358 1 tbsp country dijon mustard Calories 15 salt and pepper, to taste Calories 16
        • The olive oil should be 270 - not sure which olive oil they use, but should be at around 90 calories/tbsp. There are no calories in salt and pepper (not the amount that's used). The goat cheese measurement is wrong, therefore the calories are wrong. Hope that helps. And keep in mind that not all of the dressing gets used up (you'll probably end up using about half)! Also, this is meant to be a dinner salad and adjusted to your preference - perhaps 1 green apple is too much and you used half.
  • Most of the olive oil I have seen averages around 110-115 calories per TBSP. If you could provide the brand of the olive used in this recipe that comes to 90/TBSP calories that would be helpful. Also, the goat cheese measurements are not wrong..I just converted 1/4 cup to grams and 57 grams is the equivalent. Depending on the type of goat cheese used, calories can vary from 90 to 150 calories..so maybe I will try to find a lighter goat cheese I will still make this salad as it does sound delish but will reduce the oil to about 3 tsp to cut the calories by a third, and reduce the other dressing ingredients accordingly. I think with these adjustments, the calorie count can be brought closer to the 400-500 ..which is acceptable for a single serving at dinner (I like smaller meals spread throughout the day).
