Isn’t this just the cutest bowl of rice you’ve ever seen? Don’t be fooled, it’s also absolutely scrumptious.

Using ZICO Natural Coconut Water, I infused the butternut squash rice with a light and healthy coconut flavor, mixed in some organic coconut flakes for texture and a hint of sweetness and then tossed it all with chopped cilantro for a taste so sensational, you’ll be scraping the bowl.

Lu and I drink coconut water all the time at home. I love to take a swig after a workout or when I’m really thirsty and need to feel refereshed. Coconut water always does the trick.

Also, I started buying Chocolate ZICO Coconut Water and now, after dinner, I’ll take a swig or pour out half a cup of it and it satisfies my sweet tooth urges. It’s honestly helped with my weight management a bit. Talk about a versatile drink!

When designing a recipe for ZICO, I knew I had to make something coconut flavored. Well, duh. Since this is a blog dedicated to spiralizing, it was a bit more challenging. Sure, I could do a predictable coconut curry, but I wanted to really highlight the flavors of the coconut water while making a healthy, gluten-free and Paleo recipe.

Luckily, I’m obsessed with my Inspiralized rice right now. Now, let me digress for a moment.

If you follow me on Twitter or Instagram, you’ll know that I’m in Florida right now, visiting my parents and blogging remotely…. you know, waking up and doing work out on the deck with the sun in my face and my bikini on.

Anyway.. this means that Lu is home alone to fend for himself. Monday night (my first night away), he calls me to teach him how to make the tilapia and butternut squash rice that I left him in the fridge. To be honest, I was stunned that he was making that effort – I was expecting to get an e-mail confirming his Seamless Web order.

As I’m telling him instructions, he’s also texting me. In the end, he made the rice and devoured the entire plate (two filets of tilapia!). I was literally walking him through the process, step by step. “Okay, honey, but how long do I have to wait until I put the fish in the skillet after I put the olive oil in?” I mean, basic stuff, right? He’s so adorable, I can’t stand it.

  • Looks great! I love my spiralizer, but couldn't you grate the squash in the food processor with a grater attachment and get the same results?
  • Could you use the food processor with the grating attachment to obtain similar results and skip the spiralizer? One less thing to wash?
    • Unfortunately, the texture is not as good/rice-like! It becomes soggy when cooked. I recommend spiralizing the noodles and prepping the rice in advance! Hope this helps :)
  • Thank you for a wonderful recipe. The flavors are simply awesome. My butternut squash "rice" turned out beautifully, the trick is not to over cook it. Can't wait to try some of your other recipes. P.S. My "meat and potatoes" hubby loved it and asked me to make this again. Soon!
