Mint Pesto Zucchini Pasta with Goat Cheese

I’ll be the first to admit that I’m bad about washing my produce. If I rinse an apple before biting down, it’s a special occasion. I’m usually in such a rush, pacing around my kitchen like a mad woman, rummaging through my chaotic pantry and running downstairs to purchase something last minute.

Actually, whenever Lu asks me to grab him a piece of fruit from the fridge, he always goes “Rinse it first!” because he knows I most likely won’t.

When the founder of the Wild Mint Shop, Hannah, reached out to me, I knew it was a sign that it was about time I incorporated some non-toxic cleaning products into my kitchen.

Before I get into it, first, let’s talk about how small of a world it is. Hannah isn’t just a random business owner – I went to Wake Forest University with her! Even though I hadn’t talked to her since college, it was such a nice message to get from a young entrepreneur like myself (we both graduated 2009), passionate about healthy, clean living.

After more requests for summer-friendly cold pasta dishes, I’ve really been working on easy, no-sweat-required recipes that are full of fresh flavor. Plus, everything tastes better with creamy, soft, fluffy goat cheese.

Nutritional Information and Recipe

Inspiralized

Mint Pesto Zucchini Pasta with Goat Cheese

Prep Time 15 minutes
Servings 2

Ingredients

  • 2 medium zucchinis Blade C
  • ½ cup snow peas
  • 1/2 cup diced scallions
  • ¼ cup crumbled goat cheese 2-3oz
  • For the pesto:
  • 2 tablespoon minced mint leaves
  • 1/2 small avocado peeled, insides cubed
  • 1/2-1 teaspoon minced garlic
  • zest of 1 small lemon
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons slivered blanched almonds
  • 3 tablespoons extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Place all of the ingredients for the pesto into a food processor and pulse until creamy. Taste and adjust, if necessary.
  • In a large mixing bowl, place in the zucchini noodles, snap peas and scallions. Pour the dressing over the mixture and toss to combine thoroughly.
  • Divide the noodle mixture into two bowls and top each equally with goat cheese.

      • I'm with Gina...goat cheese and I'm sold. I use to be terrible for washing fruit...then one day I soaked my grapes, blueberries and strawberries for 5 minutes in vinegar and water and the water was so dirty it's now the first thing I do when I get home from the store. But I find the berries last A LOT longer in the fridge!!!
