Alice – I’m so glad you like the blog! Cooling the noodles is to compact them, yes, so that when you place them in a skillet, the noodles are chilled and sticked together! Hope this helps.

Quick question on the recipe: When the noodles are cooling the fridge, is the purpose of pressing down with another bowl or can to compact the noodles or are we trying to get moisture out in this step?
