Made this for dinner tonight and it’s SO delicious! The few scallops add just enough protein, the walnuts are like little candies and the dressing is subtle enough to let all the flavors come through. My only complaint–it’s difficult to eat the long apple noodles. Next time I’ll spiralize them into rounds or snip the noodles shorter. A small complaint about a thoroughly delectable salad..
