I read on an earlier blog that you are NOT to salt them before you cook them.  The salt brings out the moisture.  Also, you are not to peel them.  Hope this helps, but I saw that on this site.]]></description>

What I currently do is inspiralize them....sprinkle them with salt...put them in a strainer for awhile...quickly rinse them off and then sautéed them.....and they are always just a puddle!  Any recommendations?]]></description>
