Spiralizer Meal Plans
So, what should you expect from this meal plans?
These meal plans are designed for the beginner to intermediate cook who has a busy lifestyle and can’t spend 30 minutes to an hour on weeknights preparing dinner. Everything is outlined from A to Z for easy following. You’ll print out the meal plan (it’s downloaded as a PDF) and follow along to fully prepare a work week of meals (Sunday evening through Friday evening.) Why not Saturday meals?
You have to treat yourself at least once a week! There are also shopping lists for the week and specific tips are given along the way for best storing and preparing those spiralized veggies.
You’ll start off by spiralizing everything for the week and then you’ll dive right into preparation of the rest of the recipes. Some recipes are cooked fully through (the ones that save well) and for others, you’ll prepare everything so that when you go to cook that weeknight, dinner won’t take more than 5-10 minutes of prep work!
Most importantly, these meal plans offer healthy and delicious spiralized meals that squeeze in seasonal veggies into every single meal. You’ll have fun prepping for the week!
I can’t believe that I’m already one week #postpartum 🤯 if you had told me a week ago at this time that my neck would feel better and I’d be able to walk my kids to school in the morning, I would’ve never believed it. as you can see from this photo, I was in a rough physical place. I went 4 days with an hour of sleep daily and by the time I was home with the twins, I was so sleep deprived and delirious, I was feeling hopeless. 😞
after delivering the twins, I almost immediately felt extreme neck pain, which was soon after compounded with the most intense migraine of my life. the doctors concluded (after tests such as a CAT scan) that it was a combination of a serious neck strain/sprain and a potential spinal headache, which is a complication from an epidural. they said it should resolve in 7-14 days, but in the moment that felt like an unsurvivable timeframe.
the neck sprain was from pushing two babies out of my body in 10 minutes and not using the proper muscles - I craned my neck! also, I pushed out Baby B (Sol!) while holding on to Baby A (Rio!), and if you look at the second photo here, you can see how I completely used my neck to do that.
now, I’d say that I have a pain of a 2/10 instead of a 10/10, thanks to plenty of rest, two amazing physical therapy sessions, and time. I’m so happy I can do everyday tasks again, and I’ll never take my health for granted again. 🙏🏼

our hearts couldn’t be any fuller! luca and roma started their separate montessori school programs today, Toddler and Primary! 📚✏️
I was feeling all the mom guilt last week that I didn’t feel well enough to take them to orientation (I couldn’t get out of bed), but I rested up and today I woke up for the first time with manageable neck pain, and I was able to get up and walk them to school (with the help of Lu!) and be there for this sweet moment 👦🏻👧🏻 now I’m back with the twins sleeping on my chest post-feed and I’m finally feeling happy, hopeful, and less defeated. for the first time in my life, I felt a real sadness and hopelessness that was scary, but telling everyone around me about it made it less overwhelming and enabled my family to really step in and help and allow me to heal and feel better mentally and physically 🙏🏼
I’m especially proud of Luca and Roma, for understanding that mama needed to rest and couldn’t be there for them for the first time. they were gentle, gave me space, held my hand and laid next to me and kissed me to “make mommy better.” and now they’re off to school!! 😭💙💓 ...
They’re here! 👶🏻👶🏻 Meet Rio Alan, born 6lbs 14oz at 7:35pm and Sol Rigo, born 3 minutes later at 7:38pm and 6lbs 3oz, on 9/7 at 37 weeks via induction. The twins are absolutely magical and everyone is so in love, especially Luca and Roma, they’re the best big brother and sister. Unfortunately, a swift 10 minute delivery left mama with a neck injury that has rendered me mostly immobile and in terrible pain. I’ll share more as soon as I can, but I wanted to give my Insta fam an update, as I know many of you have been worried by my silence. Thank you for your love, concern, and sweet messages. More to come as I heal… for now, I’m spending every extra ounce of strength on my family. 🙏🏼 ...
I can’t believe in less than a couple of days, I’ll be full term (37 weeks) with these identical twin boys. 💙👶🏻👶🏻 to be totally honest, I was nervous this entire pregnancy. since my 12 week ultrasound when I found out this biggest surprise of my life, everyone (doctors, nurses, strangers on the internet) warned me of the risks and shared their stories of what can/what went wrong 😳 every ultrasound scan, I held my breath. and I won’t breathe until these babies are healthy and safe in my arms. I have no idea what to expect on Tuesday (I’m going in Tuesday evening for an induction), but I’m going to take it just as I have this entire pregnancy: moment by moment. 🙏🏼
