Use grated havarti cheese instead of cheddar. I also like to toss the spirals with duck fat or beef tallow (melted) spoked paprika and a dash of maldon salt and ground pepper and put on parchment paper in oven to do the first cook. then remove and add egg/ground pork and havarti cheese to a fry the second time in a hot skillet with the duck fat or beef tallow to crisp up. .Don’t even bother trimming…cut like pizza in triangles.

So I made them again with thicker noodles. Aaaaand, they fell apart. Not that I mind for this recipe, it was amazing both times. But for other recipes I don’t think I want the noodles disintegrating. What am I doing wrong?
