Whoever said “opposites attract” was definitely on to something. Case in point: Lu and I.

Don’t get me wrong, Lu and I certainly have many similarities, but we do have our different habits and personality quirks – he’s super neat around the apartment and I’m, well, not so super neat. He usually has to remind me to close the cabinets and drawers after cooking or squeegee the glass shower door.

Just earlier this week, he left for work in the morning and found my keys in the door lock, from the night before. Oops!

I’m overjoyed by how well-received my recipes have been in the gluten-free and Paleo community. Not only is it flattering, but it’s inspiring. I love seeing how passionate people are about their mind and body. Of course, I’m a strong proponent of eating nutritiously and treating your body preciously. 

While I fall off the wagon every once in a while (probably more than I’d like to admit), I always come back to my plate to make me feel better. There’s nothing like a monstrous salad loaded with veggies to get you feeling light and fit. Pair that with 30-45 minutes of exercise and you’ll be walking on clouds by the end of the day.

Happy October! Fall is upon us. This means fall produce. So what is a girl to do who runs a food blog where spiralized zucchinis are her bread and butter? Rest assured, I’ve got a plan.

Even though you can get zucchini year-round, it’s time to give the other spiralizable vegetables some of the spotlight. Sweet potatoes are a great starting point. They’re healthy, colorful, and are so much more flavorful than regular pasta. Unlike roasting sweet potatoes, when you cook them in a skillet, they don’t turn out as sweet, which is best when making a savory dinner.

Spiralized Sweet Potato Noodle Bun with Salmon Sandwich

I’ve got to say, the Paleo community is very friendly, inviting and collaborative. When I reached out to Juli from PaleOMG, she responded right away and was enthusiastic about me contributing a recipe for her blog, featuring my sweet potato noodle bun. She even introduced me to one of her other Paleo-bloggin’ friends… very cool.

Now, viewer discretion is advised, because this sandwich is MASSIVE. I purposefully made it larger-than-life for dramatics, but if you were making it yourself, it would of course be normally proportioned. The salmon, bacon, avocado and sweetness of the bun make for a melting pot of flavor and a home-run in the Paleo sandwich department, I think.

If you’re crying over your football team losing this weekend, or you don’t care about sports but your boyfriend/girlfriend/friend/dog does, console everyone with today’s BLT. Grilled tomato, a giant tuna steak, bacon, sriracha, and a sweet potato noodle bun: if that doesn’t make you forget about life’s woes, you’re a lost cause. 

I really should call this recipe a BKT, because instead of regular lettuce, I used kale. Tough kale works best with this sandwich, because it’s “open-faced,” which means that it doesn’t have a top bun, only a bottom. The bun, of course, is made of sweet potato noodles
