No longer should we think “I’m going to make {insert protein here} with a side of {insert vegetable here} and a little bit of {insert carb here}.” 

Now, we think, “I’m going to make {insert spiralized veggie here} with a side of {insert protein here}.” The vegetables are stealing the show!

Once, my mother and I ordered champagne and lump crab meat at an airport. I actually forget where we were going, but we felt special. There’s something about lump crab meat that’s fancy.

I like to think that this spiralized butternut squash pasta dish is regal. The feta and parsley look stunning on top of the orange noodles and the flavors… well, the flavors are fit for a King (or in my case, a Queen!)

The best part about Thanksgiving? Leftovers.

I’m talking roast turkey with gobs of cranberry sauce and fistfuls of stuffing, somehow impossibly crammed in between two slices of bread. I’m always impressed with how my father somehow manages to eat all of the stuffing leftovers over the course of a few hours, the next day. 

In a totally conscious effort to not gain 5 lbs the weekend after Thanksgiving (as always), ditch the bread and marshmallow melted sweet potato casserole, grab your spiralizer, and make some zucchini pasta to go along with your leftovers.

Garlic Zucchini Noodles with Leeks, Mushroom and Light Gravy

Weirdly enough, I don’t eat my turkey with gravy. I like it dry. In fact, I like all my meats well done and dry, mainly because, I don’t like feeling so close to an animal’s heart beat and blood flow. I blame it on being previously vegan. Despite my affinity towards overcooked meats, I love pouring creamy gravy all over my vegetables. Having said that, I thought it was only appropriate to end my week of Inspiralized Thanksgiving side dishes with a gravy recipe.

Oh, and, you didn’t think we were going to go the whole week without zucchini noodles, did you? Ha! I’d never. I’m saving the best for last!
