With spiralizing, it takes just a couple tries to get the hang of it. What should you do with the handles? How do you place the veggie on the actual machine? Which way? How fast should you turn the handle? 

The first couple times I spiralized, my results were plenty of cute, bouncy noodles, but there were also a bunch of half-moon-shaped zucchini slices. Womp, womp.

Still, to this day, there are always those stragglers… the half-moons. The little slices of vegetable that look like clipped fingernails. So, what do you do with them? Throw them away? No way! Today, I’m sharing with you my favorite dish to make with those wretched half-moons.

What’s inside? Simple ingredients: zucchini noodles, bacon, mushrooms, kale and 6 eggs. That’s it… oh, and a smidge of garlic powder and some pepper to taste.

Chorizo. Just the word itself sounds sexy.

Smoked chorizo (of the Spanish type) is my jam. On Saturday mornings, while Lu does a little cleaning (he’s the best!), I cook up a big batch of eggs, kale, avocado, onions and chorizo, seasoned lightly with smoked paprika. We can’t wait to dig in. 

Before I even wash my face or put contacts in (settling for my smudged Warby Parkers), I’m crumbling chorizo and scooping out avocado meat. By the time my eyes have fully opened, we’re already sitting in our kitchen, stuffing our faces and sipping coffee.

Butternut Squash Carrot Noodles with Sausage & Kale

Picture this. You’re in the supermarket, searching desperately for a canned pasta sauce for your healthy spiralized veggie noodles to hurry home and make a quick dinner. These are your options:

Pasta Sauce A: Few ingredients, all recognizable whole foods or seasonings.
Pasta Sauce B: Many ingredients, many are unrecognizable and end in “phate” or “xyl”. Say what?!
Pasta Sauce C: Few ingredients, all recognizable whole foods or seasonings, organic, no refined sugar or dairy.
Pasta Sauce D:  Without reading the ingredients, the packaging says “Fat Free” and “Sugar Free.” There may be a picture of a creepy used-car-salesman on the front, beckoning you.

It’s the day after Thanksgiving and you haven’t taken off your Lululemons yet, in fear of squeezing into a pair of jeans. Buttons are your enemy and spandex leggings are your friends.

Don’t fret, it’s just a little water weight gain and it’ll shed quickly, especially if you’re careful over the next few days, eating cleanly and leanly.

Whenever I need to drop a few pounds or just simply want to feel lighter and healthier after an indulgent weekend or evening, I always make the dish you see above: Baked Chicken and Kale Zucchini Pasta.

I’m overjoyed by how well-received my recipes have been in the gluten-free and Paleo community. Not only is it flattering, but it’s inspiring. I love seeing how passionate people are about their mind and body. Of course, I’m a strong proponent of eating nutritiously and treating your body preciously. 

While I fall off the wagon every once in a while (probably more than I’d like to admit), I always come back to my plate to make me feel better. There’s nothing like a monstrous salad loaded with veggies to get you feeling light and fit. Pair that with 30-45 minutes of exercise and you’ll be walking on clouds by the end of the day.

Do you still have that leftover butternut squash from yesterday? Feeling guilty about wasting it?  

Well, if you haven’t made one of those amazing recipes that I posted up yesterday, then get your butt to the grocery store and pick up the items for today’s dish, because it’s all sorts of wonderful! 

Frankly, butternut squash is pretty magical. When you cut it open, deseed it, chop it up into cubes and get it ready to be roasted, it has absolutely no smell or flavor. Unless you’ve eaten it before, you could never know that it will end up tasting as luxuriously smooth and sweet as it does once roasted.

If you’re crying over your football team losing this weekend, or you don’t care about sports but your boyfriend/girlfriend/friend/dog does, console everyone with today’s BLT. Grilled tomato, a giant tuna steak, bacon, sriracha, and a sweet potato noodle bun: if that doesn’t make you forget about life’s woes, you’re a lost cause. 

I really should call this recipe a BKT, because instead of regular lettuce, I used kale. Tough kale works best with this sandwich, because it’s “open-faced,” which means that it doesn’t have a top bun, only a bottom. The bun, of course, is made of sweet potato noodles

When I woke up Friday morning and walked outside, it was chilly and crisp. Did I sleep through September? As I’ve mentioned before, I love the fall…. I wait anxiously for Starbucks to release their Pumpkin Spice Latte, look forward to apple picking at the farms near my hometown in Jersey, and stress about my Halloween costume (what should I be?!) 

You’re going to see a lot of noodle soups on Inspiralized this autumn and winter. Soups are great, because they’re easy to bring to work for lunch and are always comforting on a bad day (or a good day!) In true Inspiralized fashion, I offer you a healthy and creative green juice to serve to your guests…. just pour into a champagne flute, wine glass or hipster mason jar and let everyone be impressed. The carrot against the bright green shouts “I’m healthy!” and offers an after-sip crunch… think of it like a healthy tortilla strip for this Mexican-inspired green juice.

Last week, I posted a picture of my healthy version of the ramen burger, using a turkey burger sandwiched between two sweet potato noodle buns. I promised a recipe, and now I’m delivering!

This time around, I left the turkey burger out and added kale for some crunch! Honestly, the sweet potato noodle bun is so delicious, it’s a shame to muddle its flavor using a meat patty. Unlike traditional burger buns, this noodle bun is the star, so let it shine!

I apologize for the second recipe containing Andouille sausage this week. Clearly, I’m trying to avoid wasting food. With all the recipe testing I do, there’s a lot of wasted food. Sometimes, I bring down a finished dish for my doormen – or, I’ll put a meal in the fridge for Lu to try when he gets home. But, it’s hard to avoid wasting ingredients. In case you missed my brief spiel about enhancing boring salads, check that out. Lemme quickly rehash… Begin speil. You’ll never see me eating a regular salad ever again. What’s “regular” salad? You know – a bed of lifeless lettuce that lays squished under chopped cucumbers, croutons, grape tomatoes, sliced onions and if you’re lucky – carrots, radishes and maybe some raw bell pepper. Don’t get me wrong – I love salad. You’ll often find me frequenting salad bars like Chop’t or Just Salad in the city – they offer a bit of creativity in ingredients, but their options are all prepared the same mundane way – chopped, diced or sliced.
