I have a kitchenaid spiralizer attachment for my mixer and beets from the garden and on a quest to eat super healthy and get extra wt off so I tried this recipe for the first time and served with baby arugula and was very tasty and satisfying. I’ll def make again.

I made this with lime juice instead of lemon, and garbanzo beans instead of white beans. The only thing I would change is I think it would be better as beet rice instead of noodles. It would have been much easier to eat that way

What a very sweet write up about you and your mom. Happy Birthday to Ali’s mom! She raised you well, you are a very inspiring young woman and you always seems so bubbly and down to earth. God Bless you both.

I love your beet spiralizing confidence – wearing a light shirt. I always manage to splash beet juice on me. Cherish your time with your mom. My mom has been gone almost 11 years. The highlight of my day was calling her to find out what she was making for dinner. The little things are what you miss. Have fun in Florida celebrating the end to your 20’s. The 30’s are amazing!

I enjoy hearing and reading stories that show love for our parents. Although my mother passed on too soon I find comfort in reading heartfelt comments that depict how a daughter or son feels about their parent(s). Its clear as day how much you love your mom (and dad) and thats just a beautiful thing. Bless our parents present and past.

Your mom sounds like a peach! My mom will turn 90 in July, and she’s going strong — healthy, smart, and funny with a warm and generous spirit. You and I are both lucky! As for this salad: I can’t wait to make it! I routinely make a white beans and tuna salad, but adding the spiralized beets will truly turn it into a gourmet meal! Thanks!

Nothing beets a good relationship with your mom. (Sorry, had to use an appropriate food pun. Ha!) Though my mom can (I say lovingly) drive me nuts sometimes, haha, I wouldn’t change our relationship. She helped me become the person I did today. Cheers to moms and happy birthday to yours! 🙂
