Two Ingredient Pancakes with Spiralized Apples

For those of you running around trying to get all your holiday to-dos done, make sure you start your day off with a fueling breakfast – it’ll make your day more productive and you’ll end up eating better throughout the day if you start it off right.

If you are sick of grabbing granola bars, having oatmeal, or are stuck in a general breakfast rut, you must try ingredient pancakes. They’re quick, easy – and seriously taste like real pancakes, except they’re made with just two ingredients: potassium rich bananas and protein-packed eggs.

These are special, because they’re topped with spiralized apples that have been cooked down in coconut oil.

Two Ingredient Pancakes with Cinnamon Spiralized Apples (video)

Ingredients

  • 4 large eggs beaten
  • 2 medium ripe bananas
  • 2 teaspoons coconut oil
  • 1 apple Blade D
  • 1/4 teaspoon cinnamon
  • maple syrup to serve

Instructions

  • Place the bananas in a bowl and mash it with a fork until no big clumps remain. If you have the time, try using an electric mixer to really get those clumps out. Add in the eggs and mix together thoroughly to combine.
  • Heat a griddle or large skillet over medium-high heat. Once the pan is heated, coat with cooking spray and then ladle in the pancake mixture, 2 tablespoons at a time. Cook the pancakes for 1-2 minutes or until set on the bottom, then flip and cook another 2 minutes or until the pancakes are slightly browned and cooked through. They won’t be fluffy, they’ll be very flat – but embrace this new texture! Repeat in batches until all the batter is used, transferring to a plate as they finish.
  • Once the pancakes are done, add in the coconut oil and swirl around to coat the pan. Add in the apple noodles and sprinkle with cinnamon. Cook the apple noodles for 2-3 minutes or until totally wilted.
  • Place 4 pancakes per plate and top with apples. Drizzle with maple syrup. Serve.

  • This obviously takes it to three ingredients instead of two, but if you don't like the flat pancake texture (or need some time to get used to it), adding 1/8 or 1/4 baking powder will fluff them up a bit.

    • Actually, the pancakes are 2 ingredients - banana & egg. The apples are the topping (and use 3 ingredients if we're counting . . . .)
      • Actually...I think the above comment about "3" ingredients was relative to IF you added the baking powder to the pancake mix to fluff them up, but nobody is counting ;)
  • Just tried these with the suggestion of adding some baking powder to the mix...they actually did rise a bit! Don't go into this expecting the same texture and fluff factor of a regular pancake though, it's very different. My five year old loved them. Will be making them again!
  • These were great but I've never been a successful pancake maker. Mine were misshaped but still tasted great. But everything tastes great with maple syrup. The apple really makes this.

  • These are delicious! I enjoy them all the time. They’re like crepes. I use an immersion blender in a 4 C Pyrex measuring cup to blend. I also add cinnamon nutmeg chia blend to my banana mix. I use a 3”+|- ring mold sprayed with Pam to form small pancakes Then, dollop coconut whipped cream on top. They’re delicious!
