Labor Day weekend came and went and now I’m back with another installment of my What I Ate Today series, where I share exactly what I ate.
I used to go overboard on vacations (eating and drinking everything in sight), but now, I just continue my same 80/20 healthy lifestyle so that when I get back home, I’m not in “detox mode.”
So let’s get into what I ate yesterday, September 4, 2018.
What I Ate Today
Breakfast snack
Usually I have this Perfect Bar before my morning workout, but I just honestly was so hungry when I woke up and I didn’t feel like taking the time to make a smoothie, and I just wanted something grab-able. Plus, I kinda crave these bars now! I had a Perfect Bar, same as always:
Breakfast
Around 10:30am, I had made it through my Inbox and was ready to make a smoothie. LUCKILY, I got a fresh batch of Daily Harvest smoothies before Labor Day weekend, so I had a healthy smoothie! I didn’t have smoothie ingredients (my fridge was empty except for a couple essentials I bought for Luca’s breakfast and our coffee the night we got home) so I was so grateful for these! Lunch
As I said before, I only bought the necessities the night we got back from Florida, so I had to order something. I ordered my favorite Coconut Chicken Curry bowl from a local spot in Jersey City called Short Grain. Always so good – it has pickled onions, salad, cucumber, carrot, brown rice and the most delicious curried chicken. I usually top it with avocado but we didn’t have any (fridge is EMPTY!) This meal always keeps me full until dinner.
Snack
I always get really full from those curry chicken bowls (so much rice!), so I had a light snack – a leftover egg donut from Luca’s breakfast dipped in some cashew butter.
Dinner
I made my roasted veggie bowls for dinner (Lu has been requesting them lately!) – roasted balsamic brussels sprouts, sweet potatoes with chili powder, broccoli with lemon and garlic, served over lentils and topped with avocado and tahini drizzle. The best!
Dessert
I had a bowl of Veggie Stix (always craving salty!) That’s it!
