Spicy Sesame Ginger Chicken Stir Fry with Zucchini Noodles

Ingredients
1tablespoonsesame oil
8ouncesbonelessskinless chicken breast cut into ¼” thick pieces
salt and pepper
2large garlic cloveminced
1tablespoonpeeled and minced ginger
1/2teaspoonred pepper flakesor less, if you don’t like heat
1red bell pepperBlade A, noodles trimmed
2medium zucchinisBlade C, noodles trimmed
1red onionBlade A, noodles trimmed
1.5tablespoonssoy sauce
¼cupdiced scallionsgreen parts only to garnish
1teaspoonsesame seedsto garnish (optional)
Instructions
Heat a wok or large skillet over high heat. Once pan is hot, add the oil and swirl to coat. Add the chicken, season with salt and pepper, and let cook for 2 minutes. Add the garlic, ginger, red pepper flakes, and toss for 2 minutes. Add the bell peppers, zucchini noodles, onions, soy sauce, and toss well to combine. Stir fry for 5 more minutes or until chicken is cooked through and veggies are crisp-tender.
Divide stir fry into bowls and garnish with scallions and sesame seeds.
