Easy Egg Salad with Spiralized Cucumber

Ingredients

  • 1/2 English seedless cucumber Blade A, noodles trimmed*
  • 1 tablespoon chopped fresh parsley to garnish
  • *when spiralizing the cucumber use soft pressure to yield thinner noodles
  • For the egg salad:
  • 3-4 large hard-boiled eggs preferably chilled (use 4 eggs if you don’t like it as creamy – use 3 if you like a creamy egg salad)
  • 1/3 cup nonfat plain Greek yogurt
  • 1/2 tablespoon Dijon mustard
  • 1 teaspoon freshly squeezed lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 cup chopped celery
  • 1/4 teaspoon salt
  • pepper

Instructions

  • Place all of the ingredients for the egg salad into a medium bowl and mix well.
  • Place the cucumber noodles in a bowl and top with the egg salad and serve, garnished with parsley.
