Avocado Breakfast Fried Rice with Bacon

Ingredients

  • 4 strips of bacon
  • 2 garlic cloves minced
  • 1 small white onion diced
  • ΒΌ teaspoon red pepper flakes
  • 1 cup frozen green peas
  • 3-4 cups cooked brown rice
  • 2 large eggs
  • 2 tablespoons low sodium soy sauce
  • 1 large avocado peeled, pitted, and diced

Instructions

  • Place a large pan over medium-high heat. Add the bacon and cook until crispy, flipping halfway through. Set bacon aside on a paper towel lined plate. Add in the garlic, onion, and red pepper flakes and cook until translucent, stirring constantly, about 3 minutes. Add the peas and rice and stir well to combine. Create a cavity in the center of the rice mixture and add the eggs and immediately start to scramble. Once scrambled, stir to combine the egg into the rice. Add the soy sauce and stir again. Remove from heat and crumble over the bacon, add the avocado, and stir again to combine. Serve.
