Buffalo Cauliflower and White Bean Quinoa Bake

Ingredients

  • 1 cup buffalo sauce
  • 1 large head of cauliflower florets only
  • 1 15- ounce can white beans drained and rinsed
  • salt to taste
  • 2 cooked cups quinoa
  • 3 celery ribs sliced into half moons
  • ½ cup shredded cheddar cheese
  • ¼ cup ranch dressing
  • sliced scallions for serving

Instructions

  • Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
  • In the bottom of a large bowl, add half of the buffalo sauce. Add the cauliflower and white beans and toss until fully coated. Place the cauliflower and beans on the prepared baking sheet, season with salt, and bake for 30 minutes or until cauliflower is fork tender, shaking the pan every 10 minutes.
  • In the same bowl used to make the buffalo sauce, add the quinoa, celery, and cheddar cheese and toss to combine. Once the cauliflower is done cooking, add it to the bowl and toss to combine. Transfer the mixture to a baking dish and spread it out evenly. Bake in the oven for 10 minutes or until cheese melts.
  • Remove the dish from the oven, immediately drizzle with additional buffalo sauce. Drizzle with the ranch and garnish with scallions.
