Spicy Green Harissa Chicken and Golden Beet Noodles

Ingredients

  • 1 boneless skinless chicken breast cubed
  • 3 tablespoons Mina Harissa Spicy Green Pepper Sauce
  • 1 large garlic clove minced
  • 1 large shallot peeled, minced
  • 1/4 cup chicken broth
  • 2 large golden beets with green tops attached peeled, Blade C, noodles trimmed and 2 cups of chopped greens reserved
  • salt and pepper to taste
  • 2 teaspoons minced parsley to garnish

Instructions

  • Place the chicken in a bowl with the harissa sauce. Set aside.
  • Place a large skillet over medium heat and add in the olive oil. Once the oil heats, add in the garlic and shallots. Let cook for 30 seconds or until garlic is fragrant. Then, add in the chicken with sauce and the chicken broth. Let cook for about 3 minutes or until the sauce thickens.
  • Add in the beets, beet greens and season generously with salt and pepper. Toss to combine and cover, letting cook for about 5 minutes, or until beet noodles are al dente. Uncover to toss occasionally.
  • Once done, plate into bowls and top with parsley.
